Teriyaki Chicken Foil Packs

Ingredients

  • 4 boneless skinless chicken breasts cut into strips
  • 1 head of broccoli about 2 cups of florets
  • 2 bell peppers cubed
  • 1 onion diced
  • 2 cups homemade teriyaki sauce divided
  • 2 green onion stalks diced, optional
  • 2 tsp sesame seeds optional

Instructions

  • Preheat oven to 400 degrees F.
  • Cut up the vegetables and slice the chicken into equal pieces.
  • Divide the ingredients equally onto four sheets of foil (about 12” long).
  • Top with half of the teriyaki sauce.
  • Fold each sheet of foil into a packet.
  • Place the foil packets directly onto the wire rack of the oven.
  • Cook for 20-25 minutes or until the chicken is completely cooked.
  • Carefully move the packets to a cookie sheet, open, and top with remaining cup of teriyaki sauce.
  • Garnish with green onions and sesame seeds.

Notes

  • You can add everything to a large bowl and coat with it with a cup teriyaki sauce. but I often skip this step and just assemble everything on the foil to avoid extra cleanup.
  • These foil dinners may be cooked in the oven or on the grill. The directions in the recipe card below are for baking in the oven. If you would prefer grilling, simply preheat the grill to 400 degrees, place foil packets on the grill grates, and cook for 8-10 minutes.
  • You can also cook them over the open flame of a fire pit on a grate over medium heat. Use heavy duty foil to help prevent the aluminum from tearing.
  • The packets can be placed on a baking sheet if you are worried about them leaking in the oven.
  • To help prevent things from sticking to the foil, you can use non-stick spray on the inside of the square of foil.
  • Open packets carefully, as they will be hot! It's a good idea to use oven mitts or tongs.
  • Transfer any leftovers to an airtight container to keep in the fridge for a few days.
