Instructions
In a large stock pot, cook beef and drain any excess oil.
Add remaining ingredients to the pot and bring to a boil over medium-high heat.
Reduce heat and simmer for 30 minutes.
Reduce temperature to low and cook for an additional 30 minutes.
Serve with crusty French bread or garlic toast for dipping.

Notes
As the rice cooks, it’ll absorb some of the liquid. Add a splash more broth if your soup gets too thick.
Use a wide, heavy-bottomed soup pot to help the beef brown evenly and prevent scorching.
For a thicker, stew-like texture, mash a few cooked potatoes right in the soup pot before serving.
