This yummy mango salsa recipe pairs perfectly with all sorts of dishes! We especially love it on this fresh grilled halibut that we caught on our last fishing trip.

Ingredients

  • ½ small white onion
  • 3 roma tomatoes
  • 1 ½ bell peppers
  • 1 jalapeno pepper optional
  • 1 green onions
  • 2 ripe mangoes
  • 2 Tbsp fresh cilantro
  • ½ lime
  • ¼ tsp salt

Instructions

  • Dice all of the vegetables and mango finely. Tip: a food processor can be used to make the cutting faster and easier.
  • Add to a medium mixing bowl.
  • Squeeze in the juice of 1/2 of a lime, add salt and stir.
  • Refrigerate for at least an hour so that the flavours combine.
