This crockpot salsa chicken recipe is so delicious and flavourful that we make it all the time!  Served over rice, it makes the perfect weeknight meal.

If you follow along on Facebook or Instagram then you know that I actually got my stuff together this month and made a ton of crockpot freezer meals.  Dude.  They have been a life saver so far and this one has been my absolute favorite.  So here you go.  A super easy, super delish Salsa Chicken Recipe perfect for the slow cooker.
 
Crock Pot Salsa Chicken Recipe

How to make this crockpot salsa chicken recipe:

Too busy to make this meal right away?! Pin it for later!  Pin this dish to your favorite recipe board on Pinterest and it’ll be waiting for you when you’re ready.
 
Ingredients:
  • 5-6 chicken breasts
  • 1 cup salsa
  • 1 can diced tomatoes {14 oz}
  • Medium diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1 pkg taco seasoning
  • 3 Tbsp sour cream (for serving)
 
Cook 6-8 hours on low in the crockpot.
 
Serve over rice or wrap in a tortilla. 

Just be sure to leave the house after you have set the crock pot or you will be drooling all day.  
The aroma that fills our house when this is set to cook is divine! 

Crock Pot Salsa Chicken Recipe

The combination of chicken and vegetables makes this a meal that is totally low calorie too.  It is a great dish served by itself with just a dollop of sour cream on top.  Oh and guess what?  The kids loved it too!  And the husband!  That is practically unheard of in this household ~ that everyone loved dinner!  Seriously.

Tips for making Crockpot Freezer Meals:

  • Use 1 gallon, large freezer bags.  Label bags with the date, recipe and cooking instructions.
  • Lay ingredients flat in the bag for easier storage in the freezer.
  • This 7-Quart Oval Crockpot is the only one that I use and has lasted for over ten years!
  • Defrost meals in the refrigerator or place frozen into the crockpot.  If the meal is defrosted, reduce the cooking time accordingly (subtract two hours for most crockpot meals).
  • Crockpot meals can easily be converted to Instant Pot recipes using this handy guide from Taste of Home – How to Convert Slow Cooker Recipes for the Instant Pot.
  • Store meals for up to three months in the freezer.
