One of the best things about the holidays is the Thanksgiving leftovers. This delicious slow cooker turkey soup is a great way to use not only leftover turkey meat but also the entire turkey carcass.

This hearty soup starts with our homemade turkey stock and is then combined with diced vegetables, fresh herbs and turkey breast. Everything is thrown into the crock pot, making this tasty soup a great option for leftovers the next day.

The best way to make this easy turkey soup is with leftovers but you can easily substitute many of the ingredients with ones from the grocery store. Crockpot Turkey Soup:

Ingredients:

  • 1 pound potatoes, diced
  • 3 celery stalks, sliced
  • 3 carrots, peeled, diced
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 6 cups homemade turkey broth or chicken stock
  • 1 Tbsp each fresh parsley, thyme, rosemary, finely diced (or 1 tsp dried)
  • 2 cups cooked turkey, chopped
  • 1/2 cup heavy cream

**this recipe is great for using up leftovers but fresh ingredients may be used as well.

Directions:

1. Prepare the ingredients.

2. Combine first seven ingredients in a 7-quart crockpot.

3. Cook on high 3-4 hours or low 6-8 hours until vegetables are tender.

4. Add turkey, heavy cream and stir well. 

5. Cook for an additional 30 minutes on high.

6. Serve hot.

Leftover soup may be stored in an airtight container in the fridge for up to 3-4 days. We love to change this recipe up depending on what we’ve got in the fridge. Try some of these…

Substitutions:

  • Use leftover chicken instead of leftover turkey breast.
  • Instead of potatoes try adding cauliflower rice, wild rice or wide egg noodles.
  • Try adding black pepper, bay leaves or poultry seasoning.
  • Add sweet potatoes, mashed potatoes or baby carrots.
