During the summer months, I like to incorporate some lighter meals into our routine. Usually that means including more fresh salads.

The avocado salad recipe I am sharing today is one that I particularly enjoy. The fresh, bright flavors fit perfectly with warmer weather, backyard BBQs, and picnics at the beach.

This simple salad is full of fresh veggies and packed with flavor. I love the contrast between the crunchy cucumbers and creamy avocado.

The recipe uses very basic ingredients, too, but there is plenty of room to play around with those ingredients and make this salad your own.

Avocado Salad Recipe:

Ingredients:

  • 2 avocados
  • 1 lbs. cherry tomatoes
  • 1 English cucumber
  • ½ red onion
  • 1 lemon, juiced
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Directions:

  1. Wash all the produce.
Diced cucumber

2. Cut the cucumber in quarters lengthwise and then dice.

3. Half the cherry tomatoes.

Diced avocado

4. Peel and dice the avocados.

5. Thinly slice the red onions.

6. Juice the lemon and sprinkle over the ingredients in a large bowl.

7. Add the olive oil to the ingredients.

8. Season everything with salt and pepper.

9. Mix until well combined.

10. Serve chilled.

Alternative Ingredients:

  • Roma tomatoes or grape tomatoes can be used in place of cherry tomatoes. Fleshier tomatoes make the best substitutes.
  • Throw in some chopped bell peppers or green onion.
  • Black beans or chickpeas would up the protein.
  • Crumb in some feta cheese or goat cheese.
  • Try fresh lime juice, instead of lemon juice.

  • You might also enjoy using apple cider vinegar, white wine vinegar, or red wine vinegar as the acid.
  • Avocado oil can replace olive oil.
  • Fresh herbs, like fresh cilantro or parsley, are a delicious add-in.
  • Add some nutty flavor with sesame seeds or sunflower seeds.
  • Cayenne pepper will give a little heat to the salad.
  • Try some garlic powder or fresh garlic.

Tips and Tricks:

  • I find that giving this avocado salad a bit of time to marinate in the fridge before serving allows the flavors to develop more fully.
  • Ripe avocados are going to give you the best flavor and texture in this yummy salad.
  • Store leftovers in the fridge, covered tightly with plastic wrap or in an airtight container. It should last about 24hours or so. The avocado may start to brown though.

Ingredients
 

  • 2 avocados
