Gluten-Free Cracker Toffee
When I was at Costco this month I discovered these low carb almond crackers made by Simple Mills. The ingredients are pretty clean with each cracker being about 1 net carb.
These crackers make a great base for this recipe! Giving it a yummy sweet and savoury flavour profile.
They do contain a number of spices (onion, garlic and rosemary) that are quite mild and not off-putting for our taste testers. We are on the look out for plain almond flour crackers and will update the recipe as soon as we find them!
Try this three ingredient almond flour cracker recipe to make your own plain crackers with no added spices to use for this keto cracker toffee if you want.
Ingredients
- Brown sugar Swerve, packed
- Butter, salted
- Lily’s dark chocolate chips
- Simple Mills almond flour crackers
- Pecans (optional)
Instructions
1. Line a 7×11” pan with parchment paper. Tip: a 9″x9″ pan or baking sheet would work as well.
2. Layer crackers evenly into the pan.
3. Place butter and brown sugar Swerve into a small pot.
4. Heat and stir until the mixture comes to a rolling boil. Remove from heat.
5. Pour the brown sugar Swerve mixture over the crackers gently, making sure that they remain evenly spaced.
6. Bake in the oven for 10 minutes at 350 degrees.
7. Remove from the oven and immediately sprinkle Lily’s dark chocolate chips over top.
8. As the chocolate melts, spread it over the crackers.
9. Top with pecans (optional).
10. Allow the toffee to cool in the refrigerator for two hours before breaking into pieces.
This keto cracker toffee recipe makes about 24 pieces of toffee that are only 1.5 net carbs each!
The entire family loves the sweet and salty combination of flavours in this toffee. I like to store it in the freezer and bring it out during parties and special occasions. It’s hard not to eat it all in one sitting otherwise!!

Tips for Low Carb Baking
- Find low carb substitutions for your current favorite recipes. Like almond flour instead of wheat flour and stevia instead of cane sugar.
