It is quick, easy, and delicious! With just a few simple ingredients that are easily found at my local grocery store, I can make a dip that rivals any you could find at a restaurant.

What is Pepper Jack Cheese?

Pepper Jack is similar to Monterey Jack cheese, but with a little heat. It is loaded with a variety of peppers and spices, making it an excellent alternative to milder cheeses.

What Can I Substitute for Pepper Jack?

Both Monterey Jack or white American cheese may be used as a substitute, because they both melt into a smooth and creamy texture.

What if I Can’t Find Diced Chilis?

If you don’t have diced chilis, salsa verde or a can of Rotel tomatoes may be used instead.

Ingredients

Start with these three simple ingredients from the grocery store.

  • Cream cheese, cubed – Philadelphia plain cream cheese works best here but you can try experimenting with different flavors.
  • Pepper Jack cheese, shredded – this give the dish a complexity of flavor.
  • Diced green chilis – salsa Verde can be used in a pinch.

Instructions

1. Place all of the ingredients into a 5” skillet.

2. Bake at 350 F for 15 mins.

4. Serve with tortilla chips for dipping.

How to Store Queso

  • Store leftover queso in the fridge in an airtight container. I like to use microwave-safe containers, so that I can easily reheat the dip.

Tips and Tricks

  • Packaged pre-shredded cheese is a great convenience, but I personally get the best results from this recipe when I start with a block of cheese and shred it myself.
  • If you want a heartier dip, add in some cooked ground beef, sausage, or ground chicken. You could even use kidney or black beans.
  • Feel free to add in other seasonings according to your tastes, such as chili powder, onion powder, garlic powder, or cayenne pepper.
  • Try making this easy recipe in the slow cooker.
  • This dip can also be made on the stove top. Simply combine your ingredients in a skillet or medium saucepan and cook on medium-low heat until everything is melted together, stirring frequently.
  • If you find that your dip is getting too thick, you can add in a bit of whole milk to thin it out.
