The first time that I tried it, I thought it was pretty good, but I knew it could be better. So, the search was on for a homemade version that I truly loved.

Just in case you aren’t familiar with queso, the literal translation is “cheese”. What I am talking about today is a deliciously hot cheesy dip.

With just a few simple ingredients and the convenience of a slow cooker, today’s recipe for easy crockpot queso is always a crowd pleaser. The base is made with creamy, Velveeta cheese!

Crockpot Queso

This easy appetizer is perfect for your next party or Super Bowl Sunday. Cooking it in the crockpot means you are free to hang out with friends instead of being stuck in the kitchen.

You can make it for taco night and serve it as a starter or as part of the meal. There are plenty of ways to adjust the recipe to suit your family’s preferences as well. Get creative and enjoy!

What is Velveeta?

Velveeta is a processed cheese product made from milk, modified starch, canola oil, and cheese culture, among other things. It has a smooth consistency and mild flavor, making it a great base for dips.

What can I substitute for Velveeta?

Both Monterey Jack cheese and cream cheese may be used as a substitute because they both melt into a smooth and creamy texture.

What if I can’t find salsa verde?

If you don’t have salsa verde, diced green chilies or a can of Rotel tomatoes may be used instead.

Ingredients

  • Velveeta cheese – also called American processed cheese.
  • Salsa verde – green salsa basically.
  • Pepper jack cheese, shredded – Monterey Jack works too!
  • Cumin, optional
  • Paprika, optional – for a little extra heat, use chili powder instead.
  • Diced jalapeno and green onion, for garnish

Instructions

1. Place all of the ingredients into a slow cooker.

2. Cook on low for 2 hours.

3. Stir and serve with tortilla chips for dipping.

What to serve with Queso?

  • Corn chips
  • Pretzels
  • Bread
  • Raw veggies
  • Taquitos
  • Add queso to quesadillas, nachos, or tacos.

How to store Queso?

  • Store leftover queso in an airtight container in the fridge.

Tips and Tricks

  • Switch things up by throwing in a few add-ins. Some of my favorites include green onions, bell peppers, fresh cilantro, ground beef, and sausage.
  • If you find that your dip is too thick, thin it out with a little milk. Evaporated milk is another great option for this.
  • Save yourself some scrubbing by coating the inside of your crockpot with nonstick cooking spray before adding the dip ingredients.
  • This dip can also be made on the stove top.

  • 16 oz Velveeta cheese
  • 14 oz salsa verde
  • 2 cups pepper jack cheese shredded
  • 1 tsp cumin optional
  • 1 tsp paprika optional
  • Diced jalapeno and green onion for garnish
