Orzo Greek Pasta Salad Recipe

What is orzo pasta?
Orzo is a wheat based type of pasta that is made to look like long grain rice. It’s perfect for making light pasta dishes because of how quick it is to cook and the small shape and size. Orzo is most often used in cold salads or comforting soups.
This recipe makes a perfect side dish to pair with venison steaks, grilled halibut or smoked burgers. Greek orzo salad is also awesome for camping trips or picnics because its super portable and travels well in an airtight container. It’s just as good the next day and totally easy to meal prep.
This great recipe joins my classic potato salad and easy dill pickle pasta salad in our summer salad rotation!
Greek Orzo Pasta Salad:
Ingredients:
- 250 g Orzo pasta, cooked
- 1 cup cucumber (about 1/2 of a long english cucumber), diced
- 1 cup bell peppers (about 1 large bell pepper), diced
- 10 cherry tomatoes, quartered
- 1 green onion stalk, diced
- 3/4 cup Kraft Greek salad dressing
- 1/4 cup Feta cheese, cubed
These measurements can be played with based on which ingredients are your favorite. I often add more cucumber than called for just because I love it.
You may also want to add things like: kalamata olives, goat cheese, red onion, fresh herbs or lemon zest based on your own personal tastes. There are no hard and fast rules with this summer salad recipe.
Directions:
1. In a large pot bring 6 cups of water to a boil. Add orzo pasta and cook for 5-7 minutes or until pasta is cooked to desired tenderness. Drain the pasta, rinse with cold water and allow to cool completely. This makes about 3.5 cups of cooked pasta.
2. Wash, prepare and chop up the vegetables.
3. In a large bowl combine cooked orzo and vegetables.
4. Pour dressing into the bowl, add feta and toss to mix well.
This summer orzo pasta salad is super delicious and colorful! Easily transform it into a main dish by adding diced chicken breast or ham.
More salad options:
- Add your favorite fresh vegetables like sweet corn, grape tomatoes, fresh basil, red pepper or black olives.
- In a small bowl combine red wine vinegar and extra virgin olive oil to create a homemade dressing.
- Try adding things like artichoke hearts or garbanzo beans.
