Breakfast is one of our favorite meals, breakfast foods always being a hit with the whole family and usually easy to prepare. This sausage breakfast casserole is my go-to for feeding a crowd and the best way to make weekend brunch!

Sausage & Croissant Breakfast Bake

This easy breakfast casserole recipe is perfect for feeding a large crowd on special occasions.  It’s a great one dish meal. However you could also pair it with a side of bacon, hashbrowns, tomato slices, fresh fruit etc.

Crescent Roll Breakfast Casserole Recipe:

Ingredients:

  • Large croissants, sliced – you can buy store bought or make your own using crescent roll dough.  The buttery crescent rolls give this dish the perfect flavor!
  • Mild Italian sausage, cooked – any pork sausage will work.
  • Medium white onion, diced
  • Eggs – farm fresh are our favorite.
  • Milk – whatever you have in the fridge.
  • Cheddar cheese, shredded

Directions:

1. Preheat the oven to 350 degrees.

2. Brown sausage in a large skillet on medium heat, add onion and cook until translucent.

3. Cut the flaky crescent rolls into 1″ slices.

4. In a large bowl, combine egg and milk. Add seasoning of choice.

We like to season this recipe with salt and black pepper and often add dill, red pepper flakes, garlic powder or hot sauce. Experimenting with different spices is a great way to personalize this easy breakfast recipe!

5. Spray a large 9×13″ casserole dish with non-stick cooking spray. 

6. Layer the croissants on the bottom of the pan and top with the sausage mixture, egg mixture and cheese.  

7. Give the entire casserole a stir to make sure that all of the bread is coated in the egg mixture and the sausage and cheese is evenly distributed in the baking dish.

8. Bake for 40 – 45 minutes, until the center is firm, cooked through and the croissants are golden brown.

How to store this casserole:

This delicious breakfast casserole can be wrapped in plastic wrap, stored in the fridge and saved for the next day. Or store leftovers in an airtight container for the next morning, if they last that long! It will keep in the fridge for 3-4 days.

Ingredients
 

  • 6-8 large croissants sliced
  • 1 – 375 g package mild Italian sausage cooked
  • 1 medium white onion diced
  • 10 eggs
  • 1/2 cup milk
  • 1 cup cheddar cheese shredded
