Everyone loves a good dip. At least, it’s safe to say everyone in my family does! Dips are always a crowd pleaser and make the perfect appetizer for any occasion.

I make dips for game day, movie nights, and get-togethers of all kinds with friends and family. Today I am sharing another tasty dip with you that I know you are going to love.

Copycat Chili’s Skillet Queso

This copycat Chili’s skillet queso recipe is such a great recipe because it uses such simple ingredients and only takes a few minutes to put together. Plus, you get to enjoy a restaurant-quality dish in the comfort of your own home.

I usually serve it up with bottomless chips (at least my family seems to think the bags are bottomless!) and raw veggies.

Besides being a wonderful appetizer, we also love having this yummy queso as a snack. Because of how easy it is to prepare, this recipe is a great option for serving last minute guests or when you just want a little something to munch on while you are bingeing Netflix.

With its creamy texture and great flavor, you and your family are going to love this cheesy dip.

What is Velveeta?

Velveeta is a processed cheese made from milk, modified starch, canola oil, and cheese culture among other things. It has a smooth consistency and mild flavor, making it a great base for dips.

What can I substitute for Velveeta?

Both Monterey Jack and cream cheese may be used as a substitute because they both melt into a smooth and creamy texture.

What if I can’t find canned chili?

Ground beef, canned Rotel, or salsa may be used instead. Homemade chili would be amazing too!

Ingredients

Start with a few simple ingredients from the grocery store.

  • Velveeta cheese
  • Canned chili
  • Half and half cream
  • Cayenne pepper, paprika and cumin

Instructions

1. Cut the Velveeta into cubes.

2. Combine the cheese with remaining ingredients in a large skillet over medium heat.

3. Stir frequently until the cheese melts.

4. Serve with tortilla chips for dipping.

Variations

  • While I prefer using a bean-less chili in this recipe, you can use a bean chili as well. The dip will just be chunkier.
  • Instead of canned chili, use a homemade version.
  • Add ground beef for more protein.
  • Substitute some heavy cream for some of the milk for an even creamier result.
  • Throw in some sharp cheddar cheese. I think packaged pre-shredded cheese is a great time-saver for easy cooking.
  • Top your dip with sour cream and green onions.
  • Use this yummy cheese sauce on burgers, hot dogs, and nachos.

How to Store Queso?

Store any leftover dip refrigerated in an airtight container.
