If you are a fan of smoked cheese, then you know that the options available at the grocery store are usually pretty pricey. The good news is that you will be pleasantly surprised by how simple it is to create your own versions of these expensive cheeses at home. It is a great way to save a few bucks too.

Ingredients:

  • 8 oz (250g) Philly cream cheese
  • ½ tsp smoke spice blend
  • ¼ cup peach jam
  • 1 tsp olive oil
  • Crackers

Directions:

  1. Season the cast iron skillet with olive oil.

2. Place the block of cheese in the center of the skillet.

3. Score with a knife in a cross hatch pattern.

4. Sprinkle the surface of the cheese with seasoning.

5. Place in the smoker at 165 F.

6. Let the cheese smoke for 1 hour.

7. Remove from the smoker, top with jam, and serve with crackers for dipping.

Tips and Tricks:

  • For the best results, take your cream cheese straight from the fridge to the smoker. Starting with cold cheese helps to keep it from melting too much.
  • When smoking your own cheese, doing it on a cool day is best. The lower ambient temperatures will help the cheese keep its shape.
  • Save your grill grates from melted cheese. You can do this by placing your cheese in a pan, cast iron skillet, or by using disposable aluminum pans.
  • When smoking harder cheese, some resting time will make a huge difference in the flavor. Wrap cheese blocks in parchment paper or butcher paper and keep them refrigerated for 24-48 hours. After that, use plastic wrap or a vacuum sealer to preserve your blocks of cheese, and allow another week or two for the best results.
