We recently returned from our annual fishing trip on the West Coast, and let me tell you, we hit the jackpot! We managed to haul in an abundance of fresh salmon, and the first thing we did was throw all the Pinks we caught on the smoker.

Pink salmon might not have the best reputation, but when it comes to smoking, it’s absolutely perfect. The smoky flavor really brings out the best in this underrated fish.

Now, I know not everyone has a smoker at home, and that’s totally fine! If you want to skip the whole smoking process, Costco has some fantastic smoked salmon that’s both delicious and affordable. It’s a great option when you’re craving that rich, smoky flavor without all the work.

One of our favorite things to make with smoked salmon is this simply mouthwatering smoked salmon sandwich. Trust me, it’s so easy to whip up and it’s perfect for a quick lunch or a light dinner.

Plus, it’s a great way to use up any leftover salmon you might have hanging out in the fridge.

Ingredients

Start with a few simple ingredients from the grocery store.

  • Smoked salmon, cubed – we love using our cold-smoked salmon recipe, but our Traeger smoked salmon works great too!
  • Fresh dill, chopped
  • Celery, finely diced
  • Red onion, finely diced
  • Fresh lemon juice
  • Black pepper
  • Mayonnaise – Miracle Whip can be used instead.
  • Croissants – or your sandwich bun or sliced bread of choice.
  • Spring greens, arugula, or mustard greens

Instructions

1. In a large bowl, combine the salmon, dill, celery, red onion, lemon juice, black pepper, and mayonnaise.

2. Mix everything together until you have a creamy salmon salad.

3. Cut open your croissant or bread of choice, layer on the greens, and add a generous helping of the salmon mixture.

4. Serve and enjoy your delicious sandwich!
