When I want to try something new, I think classic, healthy recipes are perfect starting points. A classic cobb salad usually uses ham, but one of the best things about salad is that it is totally customizable. I’m using chicken in today’s simple recipe instead.

This delicious chicken cobb salad is low carb and full of ripe, creamy avocado, juicy tomatoes, and crisp bacon. Packed with protein, it’s an excellent main dish for a healthy lunch or dinner for the salad lover.

Chicken Cobb Salad Recipe:
Ingredients:
- 8-10 cup of chopped lettuce
- 1 pound shredded chicken
- ¼ cup buffalo wing sauce
- 2 roma tomatoes, sliced
- 4 hard boiled eggs, sliced
- 1 ripe avocado, sliced
- ½ cucumber, chopped
- 2 Tbsp ranch or blue cheese dressing
Instructions:
1. Lay down a bed of lettuce in each of four serving dishes.
2. Mix together the chicken and wing sauce in a large bowl until combined well.
3. Place a layer of tomatoes, hard boiled egg, avocado, cucumber and buffalo chicken on top of the lettuce.
4. Top each salad with your choice of ranch or blue cheese dressing and serve.

- Use rotisserie chicken, place the meat in a stand mixer with paddle attachment to shred into pieces.
- Chicken thighs, skinless chicken breasts, or a combination, can all be used in this recipe.
