The Best Strawberry Pop Tart Recipe

My favorite Pop Tart flavor was always strawberry. There was just something about that sweet strawberry filling that hit the spot.
Sometimes, we need a little bit of nostalgia in our lives. Enter homemade strawberry Pop Tarts! This easy recipe is my take on the store-bought version. These cute little heart-shaped hand pies are perfect for Valentine’s Day, or any day!

Supplies:
- Baking sheets
- Parchment paper
- Rolling pin
- Measuring cups and spoons
- Cookie cutters
- Wire cooling rack
Strawberry Heart Pop Tart Recipe
Ingredients:
- 1 box prepared refrigerator pie crust
- 1 cup strawberry pie filling
- 1 egg yolk
- Sugar for sprinkling
Directions:
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
2. Add pie filling to a blender and puree.
Tip: strawberry jam could be used instead.
3. On a cutting board, or lightly floured surface, roll out pie crust and cut out Pop Tart pieces with a 2-inch heart cookie cutter.
Notes: you can re-roll any leftover pastry dough to get more Pop Tarts.
4. Lay bottoms of Pop Tarts on the prepared baking sheet.
5. Spoon 1-2 tablespoons of pie filling on each heart piece.
6. Place another heart piece on top and, using a fork, press the sides together.
7. Whisk one egg yolk with a teaspoon of water. Using a pastry brush, brush the egg wash over the tops of each Pop Tart.
8. Sprinkle the brushed Pop Tart with sugar.
9. Using a sharp knife, cut two slits in the middle to resemble a heart.
10. Bake for 10 minutes or until golden brown.
Tips and tricks:
- When pureeing the pie filling, an immersion blender or food processor will work just as well as a standard blender.
- Once your baked tarts have cooled completely, they can be stored at room temperature in an airtight container, for up to 5 days. They can also be frozen. Wrap each one individually in plastic wrap for extra grab-and-go convenience.
- When fresh fruit is abundant, we like to make our own jam. Homemade strawberry jam makes a delicious substitute for pie filling in this recipe. Try it with your own homemade preserves.
- I like to make my own pie crusts and keep them on hand in the freezer.
Pop tart variations:
- Any flavor of pie filling can be used.
- Store-bought jam can be used instead of pie filling.
- Add some peanut butter in with your sweet strawberry filling, for a PB&J Pop Tart.
- Make your own homemade pie dough, instead of using the refrigerated kind.
- You could also try making these with puff pastry.
- Use a pizza cutter to quickly cut the dough into squares or rectangles, instead of hearts.
- Whip up a simple icing by mixing powdered sugar, water, and a splash of vanilla extract together in a small bowl. Add a drizzle of this sweet vanilla glaze to the top of the Pop Tart.
- Decorate with a drizzle of royal icing.
