Air Fryer Taco Bake (Easy Taco Casserole Recipe)

Ingredients

  • 1 pound lean ground beef
  • 2 Tbsp taco seasoning
  • 4 6" corn tortillas
  • 1 cup cheddar cheese shredded
  • 1 cup fresh pico de gallo
  • 1 cup sour cream
  • 1 green onion stalk diced

Instructions

  • Cook beef. This can be done in a large skillet or the air fryer. Add taco seasoning and set aside.
  • Line the air fryer basket with a piece of parchment paper.
  • Layer one tortilla, 1/3 cup cheese, a third of the ground beef mixture, 1/3 cup pico, and 1/3 cup sour cream.
  • Repeat the layers until all of the ingredients are used.
  • Cook at 390 degrees F for 5-7 mins, until the top tortilla starts to turn a golden brown and the cheese is melty.
  • Top with more sour cream and green onion.
  • Use a pizza cutter to cut into wedges and serve.

Notes

  • All air fryer cook times vary slightly by brand and size, so keep an eye out to avoid burnt tortillas.
  • Preheat the air fryer briefly to help get those crispy shells on point.
  • I love how easy cleanup is when I use parchment paper, but if you don't have any, you can also use nonstick cooking spray on the basket.
  • Let your ingredients come to room temperature before assembling for even cooking.
  • Though best eaten the same day, any leftovers can be stored in an airtight container in the fridge.
