When we decided to cook steaks last week, I just knew that I needed to share them with you. This way of preparing and cooking filet mignon makes for tender and juicy steaks every time!
How do you make steak more tender?
Different cuts of meat can be lean, so making sure that your steak is tender can be challenging. Fat adds tenderness and flavour to a well cooked steak.
We create a tender and juicy steak by adding extra fat. Wrapping each steak in a strip of bacon and topping it with our homemade herb and garlic butter is key!

Bacon Wrapped Steak Recipe
Ingredients
- Filet mignon steaks – Select choice cuts from your local butcher or grocery store that are about 1.5″ thick.
- Pieces of bacon – thin cut bacon is the best choice because it cooks faster when wrapped around the steak.
- Montreal steak spice – we also like to use our homemade steak rub in a pinch.
Instructions
1. Pat the steaks dry with paper towel.
2. Wrap the sides of the steak with a slice of bacon.
3. Fasten the bacon into place with a toothpick.
4. Season steaks and coat each side of the steak with steak spice. Be sure to cover the entire surface of the steak to create a nice crust.
5. Place the steaks on the grill, preheated to 500 degrees F, at medium-high heat. The higher heat allows for a good sear on the outside of the steaks.
6. For medium rare steaks grill each side for 5 minutes. Cooking time will vary depending on how well done you want your steak.
Tip: a meat thermometer can help to check the internal temperature and get the perfect doneness.
7. While the steaks are grilling, make the herb and garlic steak butter.
8. In a small bowl combine butter and fresh herbs.
9. Place steaks on a cutting board so that the meat rests for a minute or two.
10. Top each bacon-wrapped filet mignon with a tablespoon butter mixture. As the butter melts it adds more flavour to each steak.
This filet mignon recipe makes four tender, juicy and perfectly cooked filet mignon steaks.
Tips and Tricks
- These steaks can be stored in an airtight container in the fridge for up to one week. You could also prepare them in advance and leave the raw meat in the fridge until you are ready to grill.
- Sear steaks in a cast iron skillet on the stove top before cooking to seal in flavours.
- Place the instant read thermometer into the thickest part of the steak to check for doneness.
- Having the grill set to a high temperature to start is the best way to get those awesome grill marks!
Recipe variations
Of course we think that these tenderloin steaks are perfect but if you are one to experiment in the kitchen try these variations.
- Swap out olive oil for the butter.
- Add fresh parsley to melted butter to create a sauce.
- Add a fresh head of garlic to the grill and create an aioli sauce to pair with the steaks.
- Add black pepper, red wine, brown sugar or a little salt to the steak rub.
- Serve with barbecue sauce or hot sauce.
- Try different cuts of steak like t-bone steaks or flank steak, cook time will vary.
