Chicken Burrito Bowl Recipe
Ingredients
This easy dinner comes together in minutes with a few simple ingredients from the grocery store.
- Boneless, skinless chicken breasts, cubed – cook the chicken to your liking. Stovetop skillet, baked or air fried.
- Taco seasoning – we love this homemade taco seasoning but a packet of store bought taco seasoning works too.
- Instant white rice – I like to substitute cauliflower rice for a low carb version.
- Ear of corn, grilled with the kernels cut off – this can also be microwaved for 2 mins or use a can of kernel corn.
- Black beans, drained
- Cherry tomatoes, halved
- Ripe avocado, cubed
- Pico de gallo or fresh salsa
- Sour cream – this homemade cilantro lime crema would be great too!
- Fresh cilantro, for garnish
Instructions
1. Cook the rice, set aside.
2. Meanwhile, in a medium bowl combine the chicken breast and taco seasoning.
3. Place a cast iron skillet on the stovetop and cook the chicken over medium high heat for 8-10 minutes.
4. Divide the rice, vegetables and chicken equally between four bowls.
5. Top with pico, sour cream, cilantro and enjoy!
Recipe Notes
The corn can be cooked in the microwave for two minutes or grilled on the bbq. Canned corn also works, just be sure to drain the extra liquid.
You could serve this wrapped in tortillas rather than in bowls if you prefer. Or serve with tortilla chips for a hearty burrito dip.
Leftovers can be stored in an airtight container in the refrigerator for a few days.
How to Meal Prep Chicken Burrito Bowls?
Simply prepare all of the ingredients at once, allow the chicken to cool and divide the ingredients into four separate containers. Store in the fridge until ready to use – perfect for creating a week’s worth of healthy meals!
I often store the chicken separately so that I can heat it up in the microwave before adding it to my meal prep containers.
