This is a great recipe for a busy weeknight at home, using thin chicken breasts means that the cooking time will be faster and I can get a meal on the dinner table in no time.  The creamy ranch sauce is a family favorite and super easy to make!

Tips and Tricks

  • Try this easy recipe with chicken thighs or chicken tenders instead of boneless chicken breasts.
  • If the sauce seems too thick, add an extra splash of milk or chicken stock.
  • To be sure your chicken is fully cooked, check the internal temperature using a meat thermometer inserted into the thickest part of the meat.

Bacon Ranch Chicken Skillet

Ingredients

Start with a few simple ingredients from the grocery store.  A more detailed list can be found in the recipe card below.

  • Chicken breasts – boneless, skinless
  • Bacon slices – cooked
  • Salt & pepper
  • Extra virgin olive oil
  • Butter, unsalted
  • All-purpose flour
  • Chicken broth – homemade turkey broth would work great
  • Milk – whichever you have in the fridge
  • Sour cream
  • Hidden Valley ranch seasoning mix
  • Onion powder, garlic powder & Italian seasoning
  • Fresh parsley – chopped

Instructions

1. Pat the chicken breasts dry with a paper towel.

Raw chicken breast cut into cutlets seasoned with salt and pepper in a speckled plate.

2. Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and pound to an even thickness.

3. Season chicken breast with salt and pepper.

4. Add 1 Tbsp olive oil to a large skillet.

5. Heat over medium heat until the oil starts to sizzle.

6. Add the chicken breasts to the skillet and cook until golden brown, about 5 minutes.

7. Flip and cook for an additional 3-5 minutes.

8. Remove the cooked chicken to a tray and cover to keep warm.

9. Repeat with any remaining cutlets.

10. Cook bacon in the skillet on medium-high heat until crispy. Chop and set aside.

11. Add butter to skillet and when melted, add flour. Add broth and whisk together to create a roux.

12. Add remaining ingredients, stir well and simmer for 10 minutes.

13. Add chicken and plate juices back to the pan and spoon the sauce over the chicken.

14. Simmer in the sauce until the chicken is heated through and the sauce has reduced slightly.

15. Top with bacon and parsley before serving.

Variations

  • Pro tip: make this in the slow cooker!  Simply cooke the chicken and then add everything to the crockpot to cook on low for 3 hours.
  • Substitute turkey bacon for regular bacon.
  • Chicken cutlets or even pork chops could be used instead of chicken breasts. 
  • Add cream cheese or parmesan cheese for even more cheesy goodness.
  • If you like it spicy, add in some red pepper flakes.
