Easter Mini Egg Cookie Bars – super easy to make and totally delicious, these bars are the perfect Easter dessert or treat to create with the kids!
I am a sucker for easy holiday treats, especially easy to make ones! With a pack of teenage boys in the house I am not too sure that they appreciate how darling these look, but I do know that they are quite happy to eat them.

Were they still in elementary school, I would totally make these cookie bars for them to take and share with classmates. I miss the days of volunteering in their classroom and helping with Easter parties and events at school!
Why use sugar cookie dough?
Sugar cookie dough is super versatile and easy to make with only a few ingredients from the grocery store. Start with butter, granulated sugar, all purpose flour and a splash of vanilla extract.

Cadbury mini eggs are a classic Easter treat made with creamy milk chocolate and a colorful candy shell. The round egg shape and pastel candy coating is perfectly suited for spring time treats!

This Cadbury Mini Egg bar recipe is so much fun for kids of all ages to make and take to holiday parties or events. I mean, who doesn’t love mini eggs?!
Total bonus that these bars are perfectly chewy, chocolatey and delicious! The only challenge is not eating all of the mini eggs before they go into this recipe.
How to make these Easter cookie bars:
Ingredients:
- 1 cup all purpose flour
- 3/4 cup granulated white sugar
- 1 large egg
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 tsp baking soda
- 1/2 teaspoon salt
- 1 cup Cadbury mini eggs
- 1/2 cup semi sweet chocolate chips
Tip: pre-made sugar cookie dough mix can be used as a base for these bars as well. As a busy mom, I like to use short cuts like this when I’m in a hurry to make a quick treat.
Directions:
1. Preheat the oven to 350 degrees f.
2. Line the bottom of a square 8 inch x 8 inch non stick baking pan with parchment paper.
3. In a large bowl or stand mixer, combine dry ingredients. Add butter, egg and vanilla and mix until a soft dough forms.
4. Roughly chop up the mini eggs into a third of the size. Reserve a few eggs for the top of the bar.
5. Add the mini eggs and chocolate chips to the dough in the large mixing bowl.
6. Spread the dough evenly into the square pan. Press the reserved chocolate eggs into the top of the bars.
7. Bake for 20-25 minutes until golden brown around the edges or until a toothpick inserted comes out clean. Allow to completely cool.
8. Cut into 2 inch bars for serving.
This recipe makes 16 deliciously festive bars that are perfect for Easter time! We love the combination of sugar cookie dough and milk chocolate chips. These chewy mini egg cookie bars are the perfect dessert and easy treat.
Follow the recipe exactly for best results but if you are one for experimenting try adding different ingredients for a fun variation. In the past we have used white chocolate chips , chewy toffees, chopped cadbury chocolate, dark chocolate chips or festive M&Ms.

How to store mini egg bars:
Store these sweet treats in a large freezer bag or airtight container for a week at room temperature or in the freezer for up to three months. Wrap them in cellophane with a pretty bow and they make a great gift any time of year!
