Our family loves fajitas, especially when we are camping. I have several versions, including a camp cooker fajita, tinfoil packet fajita, and a skillet fajita, depending on what we are in the mood for.
But this delicious meal isn’t just for camping. I love making them at home too.

These chicken fajitas are delicious served over rice or in both corn tortillas and flour tortillas. Add any other toppings your family likes for a complete meal that is ready in no time.
I like to add a garnish of fresh cilantro and a squeeze of lime juice for an extra burst of fresh flavor.

Recipe Notes
- You can use a store-bought packet of fajita seasoning mix to save time. Just make sure it’s salt-free, as the recipe already includes salt.
- Make your own homemade fajita seasoning with spices like cumin, chili powder, garlic powder, paprika, onion powder, cayenne pepper, oregano, and black pepper.
- Taco seasoning can be substituted for the fajita seasoning.
- Feel free to customize the fajitas with your favorite vegetables like mushrooms, zucchini, or cherry tomatoes.
- Marinating the chicken is optional in this recipe. The fajita seasoning provides plenty of flavor.
- You can use chicken thighs or chicken tenders if you prefer. Adjust the cooking time as needed to ensure they are cooked through. An instant read thermometer makes it easy to check the internal temperature of the chicken.
- While they are best enjoyed fresh, you can prepare the seasoned chicken and vegetables ahead of time and store them in the refrigerator until ready to cook in the air fryer.
- Store any leftovers in the fridge in an airtight container. You can then reheat them on the stove top or in the air fryer.
