This tasty dip is always a huge hit and is just the kind of recipe I love – quick, easy, and delicious. With just a few simple ingredients that I can easily find at any grocery store, this meatless Rotel dip is the definition of easy cooking.

If I am feeling extra fancy, I sometimes top it with chopped red bell pepper, black olives, and green onion, but it really is excellent all by itself. This also makes a great vegetarian option.

What is Rotel?

Rotel is a brand of diced tomatoes made with a blend of vine-ripened tomatoes, zesty green chilis, and mixture of secret spices.

What Can I Substitute for Rotel?

Canned diced tomatoes are a standard substitute, but lack the spicy flavor profile. Chunky salsa, with its tomato base and hot peppers, is the best choice.

What is Velveeta?

Velveeta is a processed cheese product made from milk, modified starch, canola oil, and cheese culture, among other things. It has a smooth consistency and mild flavor, making it a great base for dips.

What Can I Substitute for Velveeta?

Both Monterey Jack cheese and cream cheese may be used as a substitute because they both melt into a smooth and creamy texture.

This meatless Rotel dip needs only three simple ingredients from the grocery store.

  • Velveeta cheese
  • Can of Rotel tomatoes
  • Monterey Jack cheese, shredded

Instructions

1. Place all of the ingredients into a 5” skillet.

2. Bake in the oven at 350 degrees F for 15 mins.

3. Stir and bake for another 5 mins.

4. Serve with tortilla chips for dipping.

What to Serve With Rotel Dip?

  • A variety of chips – pita chips, bagel chips, corn chips, tortilla chips
  • Your favorite bread or cut up pitas
  • Fresh veggies like cucumbers or carrots
  • Add it to tacos with toppings like pico de gallo, sour cream, green onions, chopped fresh tomatoes, lettuce, guacamole, and fresh cilantro.

How to Store Rotel Dip?

  • Store leftovers in the fridge in an airtight container. I like to use microwave-safe containers, so that I can reheat the dip easily.

Tips and Tricks

  • Packaged pre-shredded cheese is a great convenience, but I personally get the best results from this recipe when I start with a block of cheese and shred it myself.
  • If you want a heartier dip, add in some cooked lean ground beef, Italian sausage, spicy sausage, ground turkey, or ground chicken. You could even use kidney or black beans.
  • Increase the spice level of your dip by including some hot taco seasoning, chili powder, your favorite hot sauce, or a can of green chilis.
  • Try making this easy recipe in the slow cooker.
  • This dip can also be made on the stove top. Simply combine your ingredients in a large skillet and cook on medium-low heat until everything is melted together, stirring frequently.
  • If you find that your dip is getting too thick, you can add in a little milk to thin it out.

  • 8 oz Velveeta cheese
  • 10 oz can of Rotel tomatoes
  • 2 cups 1/2 lb. Monterey Jack cheese shredded

Instructions

  • Place all of the ingredients into a 5” skillet.
