I like to pick fresh croissants up in the bakery section of my local grocery store – Costco has the best deals! Often, I buy a can of crescent roll dough and bake them the day we plan to enjoy them.
I could take the extra step of making homemade crescent rolls from scratch, but how many of us have the desire to do that?

Ham & Cheese Casserole
Today I am sharing one of those easy recipes that is very quick to make, but looks like you spent hours in the kitchen. This savory take on baked French toast is a great way to use up croissants that are getting stale.
It is also perfect for meal prep during the holidays. These types of casseroles save so much time on Christmas mornings. Just cut up some fresh fruit it serve with it and you are good to go.

Whether you serve this ham and cheese croissant casserole as an easy weeknight meal or for a weekend brunch, this delicious recipe is sure to be a hit with the whole family.

Ingredients
- Large croissants
- Thin slices of ham – deli meat like turkey or prosciutto would work too.
- Large eggs
- Milk – whatever you have in the fridge works!
- Fresh rosemary and thyme, finely chopped
- Spices
- Mozzarella cheese, half cubed, half shredded
Honey Butter and Herb Sauce
- Unsalted butter
- Honey
- Chopped rosemary and thyme

Instructions
1. Preheat the oven to 350 degrees.
2. Slice the croissants into thirds.
3. In a large mixing bowl, combine the eggs, cream, milk, fresh herbs, salt, pepper, garlic powder, and onion powder. Mix well.
4. Lightly spray a baking dish with non-stick spray.

5. Dip the pieces of the croissants into the egg mixture, turning and fully coating them. Be sure to shake off any excess mixture.

6. Place into the baking dish until all have been fitted.

7. Next, fold the slices of ham in half, then half again, and in half once more to create the illusion of a rose.

8. Slide the meat roses into the top of each roll or wherever you’d like.
Tip: for smaller roses, cut the slices of meat in half first, then fold in half (3 times) to make smaller roses.
9. Add the small cubes of cheese between the bread.

10. Sprinkle the edges with the shredded cheese to help it stay together.

11. Bake for 30-40 mins, until the egg mixture has cooked fully and the cheese is bubbly and golden brown.
12. Make the sauce by adding honey, butter, and reserved herbs to a small bowl.
13. Microwave in 30 second intervals, until butter is melted.

14. Brush the honey butter onto the croissants with a pastry brush once removed from the oven.

Serve and enjoy!

You can definitely prep the night before and leave it in the fridge overnight, cook the next morning. You can also cook and reheat leftovers, it just won’t be as soft and fresh.
