Today’s recipe for fluffy gingerbread pancakes is the perfect way to start Christmas morning. These pancakes have all the warm, spicy flavors of my favorite gingerbread cookies, but in breakfast form. You have to try them!

Instructions

1. Start by placing the flour, baking powder, salt, sugar, brown sugar, cinnamon, cloves, and ginger into a large mixing bowl. 

2. Stir or whisk all of the dry ingredients together, then add in egg, melted butter, vanilla, molasses, and milk.

3. Using a hand mixer, mix the wet ingredients into the flour mixture until well combined. Heat up a skillet on medium heat.

4. Now here is the trick to mess free, perfect pancakes! Pour your batter into a piping bag. Cut off the tip, grease your skillet with butter or cooking spray, and pipe batter into a perfect circle in the center of your skillet. Start in the center and work your way out with the batter.

5. Cook the pancake until the edges are cooked through and bubbles begin to pop on the surface.

6. Flip quickly and cook the opposite side until golden brown. Stack on a serving dish.
