Grilled Salmon Recipe with Easy Lemon & Herb Marinade

Delicious lemon grilled salmon marinated in zesty lemon & fresh herbs for a burst of flavor. Quick, healthy and perfect for any occasion!

Cooking salmon does not get much easier than with this easy salmon marinade.  It’s my favorite way to cook delicious, pan-seared salmon with just a handful of ingredients.

We love salmon! Especially fresh caught salmon from one of our fishing trips. We are lucky to have an opportunity to go salmon fishing several times a year.

This leaves me with a freezer full of fish just asking for delicious ways to prepare it. I have to say that this grilled salmon is one of my favorites!

Supplies

Ingredients

​Let’s start with a few simple ingredients from the grocery store. 

  • Salmon fillets, cut into 2” strips
  • Unsalted butter
  • Olive oil
  • Fresh lemon juice
  • Honey
  • Garlic clove, minced
  • Fresh parsley, chopped
  • Fresh dill, chopped
  • Salt & pepper

Instructions

1. Prepare the fish by removing pin bones with tweezers, removing the skin and cutting into 2” strips.

2. In a small bowl combine oil, lemon juice, honey, garlic cloves and seasonings for the marinade.  Mix well.

3. Place salmon in a large freezer bag and pour the marinade overtop.

4. Squeeze out the air and place in the fridge for 30 minutes (up to 60 mins).

5. Heat a large cast iron skillet on medium heat, add butter.

6. Remove fish from the marinade and pour 1/4 cup into the skillet (reserve remaining marinade), turn down to medium and allow garlic to cook for about 1 min until fragrant.

7. Add the salmon to the skillet and cook for 2-3 minutes per side, flipping once half way through.

Tip: the fish is cooked when the color is opaque, fish is firm to the touch and starts to flake off with a fork.

8. Remove the salmon from the skillet and add the remaining marinade.  

9. Cook until reduced and garlic is fragrant, about 2 minutes, before spooning over the fillets.

10. Serve with garlic rice, sauted broccoli and soy sauce.

Recipe Notes

  • ​Top with sliced lemons or lemon zest if desired.
  • Cook until the internal temperature reaches the desired level of doneness.
  • Change this up by replacing the lemon with orange juice, add a bit of ginger and you now have an orange ginger marinade.
  • Substitute garlic powder for garlic cloves in a pinch.

Try replacing the honey with maple syrup or brown sugar.

Dried herbs will work but fresh ingredients are always best.

You can cook this fish on the grill rack of an outdoor grill, in the air fryer or on the stove top.
