Supplies

  • 10″ round baking dish
  • Medium mixing bowl
  • Butter knife

Ingredients

  • Pillsbury Grands Cinnamon Rolls โ€“ Fluffy, sweet, and easy to use; weโ€™ve tried every store brand, but nothing beats Pillsbury rolls.
  • Non-stick baking spray โ€“ A quick spritz keeps your โ€œbrainsโ€ from sticking to the dish.
  • Red food coloring โ€“ Just a drop turns regular frosting into gory brain goo.

Tip: Homemade cream cheese icing can also be added to the top of the casserole, but using the icing that comes with the cinnamon rolls is just as good in our opinion!

How to Store These Cinnamon Rolls

If you have leftovers of this recipe, which is highly unlikely, you can store them in an airtight container (or covered in plastic wrap) at room temperature for a day or in the fridge for up to one week.

Tips and Tricks

  • For the best results, use Pillsbury Grands. They are extra fluffy and hold their shape better than off-brand cinnamon rolls.
  • Use gel food coloring for a more vibrant, blood-red look to the icing.
  • Prep the rolls the night before, cover, and bake fresh in the morning for an easy Halloween breakfast.
  • For extra gooey โ€œbrainsโ€, pour 1/2 cup of heavy whipping cream over the unbaked cinnamon rolls before they go in the oven. It soaks into the dough while baking, making the centers irresistibly soft and melt-in-your-mouth delicious!
  • A silicone baking mat under your dish can help prevent over-browning.

Cinnamon Roll Variations

  • Add a spoonful of apple pie filling and a sprinkle of brown sugar under the dough for an apple cinnamon roll casserole.
  • Or try cherry or strawberry filling for extra โ€œbloodyโ€ detail.
  • Skip the oven and make air fryer cinnamon rolls for a faster morning treat.
  • Refrigerate overnight or for at least four hours before cooking to create an overnight breakfast casserole.
  • Use a slow cooker on low for 2 hours to make gooey crockpot cinnamon rolls.
  • Drizzle with a little maple syrup or caramel sauce for added sweetness.
  • Top with crushed Halloween candy or Halloween sprinkles for extra color and crunch.
  • Mix in a drop of black food coloring to the frosting for a darker, haunted effect.
