Turkey seems to be reserved for holidays in most homes. Whether it is made for Christmas, Thanksgiving, Easter, or some other special occasion, after a big turkey dinner, there is usually quite a bit of meat left.

With Easter approaching, many of us will find ourselves with this “problem”. We put together plates of leftovers. We make turkey soup and turkey sandwiches.

But do you ever get bored with the same-old-same-old and want some new recipes to try? Today I have a yummy new way to use that extra meat that I want to share with you.

Leftover Turkey Roll Up Appetizer

These turkey roll up buns are so delicious and easy to make. They also make a nice change from reheated leftovers.

I especially love the addition of a little cranberry sauce. It brings that little something special to the roll ups.

Try these leftover turkey rolls!

You only need a few simple ingredients for this recipe and it is so easy to create different flavors and flavor combinations. Use the cheese your family likes best. Add in veggies. Make them your own!

Turkey roll ups can be enjoyed as a healthy snack and they make a perfect meal to add to lunch boxes.

They would also be a great party appetizer on game days. However you choose to enjoy them, you will be glad you did.

Directions:

1. Begin by spreading the dough into a large rectangle about 9″ x 12″ in size.

2. Spread the cranberry sauce over the dough.

3. Layer with turkey breast.

4. Sprinkle 1 cup of shredded mozzarella cheese over the toppings.

5. Now begin rolling the dough into a log.

6. Stretch the final edge over top of the roll and pinch the dough together.

7. Slice the roll into 1″ segments and place on prepared baking sheets.

8. Brush with melted butter and top with seasoning.

9. Place on a greased cookie sheet and bake at 350 for 25-30 minutes.

Alternate Ingredients:

  • Homemade pizza dough may be used to make these turkey and cheese pinwheels.
  • Soft tortillas like Flour tortillas or Corn tortillas may be used instead of the dough.
  • Low carb wraps are easy to make with leaves of lettuce.
  • Roast beef, Rotisserie chicken, Deli chicken or deli turkey slices may be used instead of leftovers.
  • Cheddar cheese, Swiss cheese, American cheese, Boursin cheese or low-fat cream cheese can all be substituted.
  • Alfredo sauce or Alabama white sauce could be used instead of cranberry!
  • Green onions, cucumber, avocado or crispy bacon could also be added to make turkey club pinwheels.
  • Add green, yellow, orange, or red bell pepper to the roll.
  • Use Ranch seasoning with a bit of garlic powder for a ranch flavor roll.

Tips and Tricks:

  • These turkey pinwheels can be made in advance and will last for up to 5 days. They can also be frozen for up to 3 months. Be sure to store them in an airtight container.
  • When making tortilla roll ups in advance, wrap the whole roll in plastic wrap until ready to slice and serve. This will prevent the edges from drying out.
  • I like to use a serrated knife to slice my roll ups and pinwheel recipes. I find that it cuts through the rolls without squishing them flat.

  • 1 cup leftover turkey breast pieces
  • 1 cup mozzarella cheese shredded
  • 2 tbsp butter melted
  • 1 tsp seasoning
