Pistachio Pudding Cookies

Ingredients
Start with a few basic ingredients from the grocery store.
- All-purpose flour
- Pistachio instant pudding mix
- Unsalted butter, room temperature
- White sugar
- Large egg
- Vanilla extract
- White chocolate chips
- Pistachios. chopped
- Green food coloring, optional
Instructions
1. In a large mixing bowl combine the sugar and softened butter.
2. Add vanilla and egg.
3. Mix until well combined.
4. Add the dry ingredients and mix again.
5. Mix in white chocolate chips and chopped pistachios to form a cookie dough.
Tip: add a little green food coloring to deepen the green color if desired.
5. Use a cookie scoop to drop dough balls onto a parchment paper lined baking sheet.
7. Bake for 8 – 10 minutes at 350 degrees.
8. Move to a cooling rack.
Tips and tricks
- Store in an airtight container for 5-6 days on the counter. Or place cookies in a large freezer bag and store in the freezer.
- These will have a green color with or without the food coloring but adding a few drops to the dough deepens the color.
- Pudding mixes help to give cookies that chewy texture but can be substituted for flour instead. Omitting the pudding would mean losing that delicious pistachio flavor though!
