Ingredients:

  • 1/3 cup margarine
  • 1/2 cup packed brown sugar
  • 1 cup sugar
  • Egg
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 1 1/2 cups rolled oats
  • 1 1/4 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk chocolate chips
  • 1 tsp pumpkin spice

Instructions:

  1. Preheat the oven to 350 F.
  2. In a large bowl, combine sugars, margarine, and egg.
  3. Mix in vanilla extract and pumpkin.
  4. Add dry ingredients and combine well.

  6. Bake for 10-12 mins.

Leave out the chocolate chips for simple pumpkin spice cookies.

Substitute the pumpkin puree for apple sauce and the pumpkin pie spice for cinnamon and you have a whole new cookie!
