My sweet chili shrimp recipe is perfect for a busy weeknight. This easy dinner is the perfect combination of spicy and sweet. And you can easily adjust how spicy you want that delicious sauce to be.
This easy recipe also makes a great appetizer for game day! Pair it with our favorite baked spinach dip or crockpot BBQ meatballs to create the perfect snack spread for watching the big game.
Chili Garlic Shrimp:
Makes 3 large appetizer portions or can be served with a salad for 4-5 people.
Ingredients
- 1 1/2 pounds jumbo shrimp with tails on, (about 20 fresh or frozen and thawed prior)
- Salt and coarse black pepper to taste
- 3-4 Tbsp olive oil
- 3 Tbsp butter
- 2 heaping tsp of fresh garlic, minced
- 2 Tbsp seafood broth or meat/veg broth or just warm boiled water
- 2 medium red chilis, thinly sliced with seeds
- 2 tsp parsley, finely chopped
- 4 Tbsp sweet chili sauce
Directions:
1. In a large non-stick pan, heat olive oil over medium-high heat. Once hot, add shrimp and season with salt and pepper. Let shrimp cook for 1 minute per side, until just turning pink. For smaller shrimp, cooking time should be reduced in half. Set aside.
2. Reduce the heat to medium-low. Deglaze the skillet with broth, and add garlic and chilis. Cook for 30 seconds until the garlic is fragrant. Add the chili sauce after that.
3. Return the shrimp and coat it in the sauce. Cook 1-2 minutes.
4. Remove just the shrimp to a serving plate.
5. Continue with the sauce. Add butter, and parsley to the sauce. Adjust seasoning if needed and simmer for a couple of minutes. Pour the sauce over the shrimp and serve immediately.
Tips and tricks:
- Before cooking, pat thawed shrimp dry with paper towels to get rid of any excess moisture.
- The sauce will thicken even more once cooled. You can thin it with more broth, water, or olive oil if needed.
- Turn this into a sweet chili shrimp stir fry by adding vegetables like sliced red peppers, snap peas, snow peas, broccoli, or carrots.
- Try marinating raw shrimp and then cooking them in an air fryer.
- Serve this easy dish as an appetizer with crusty bread, in salads, or as a main course over rice or noodles and a side of steamed green veggies.
