Watermelon Mocktail:

Ingredients:

  • 4 cups of frozen watermelon cubes
  • 1/2 cup of fresh lime juice
  • 1/4 cup of honey
  • 1/4 cup of fresh mint leaves
  • 1 cup ice cubes
  • Watermelon balls and lime wedges for garnish
  • Coarse salt for the glass rim

Directions:

  1. Prep the glasses by rubbing a lime wedge around the rim of each one and then dipping the rim into a small dish of coarse salt.

2. Add the frozen watermelon cubes, fresh lime juice, honey, water, and mint leaves to a blender.

3. Blend on high speed until the mixture is smooth and all ingredients are well combined. If needed, add a splash of water to the blender to help the blender blade move.

4. Taste the mixture and adjust the sweetness and tartness by adding more honey or lime juice as needed.

5. Add the ice cubes to the blender and blend again on high speed, until the mixture is smooth and frothy.

Note: Depending on your blender, additional liquid might be needed. If your mixture becomes too thick and the blender is having difficulty blending, add a splash of water.

6. Pour the frozen watermelon cocktail into the salt-rimmed glasses.

7. To garnish, skewer a few watermelon balls with a toothpick and place them on the rim of each glass. Add a lime wedge to the rim of each glass as well.
