Air Fryer Taco Bake (Easy Taco Casserole Recipe)

The taco bake that I am sharing with you today is one of those easy recipes that I love. It only takes a few simple ingredients, most of which are staples in our home anyway, and minimal prep.

In no time, I have a delicious taco casserole to feed my boys. And because it takes so little time, I can even make a second batch while the first is being eaten.

We get to enjoy a healthy dinner that the whole family loves and it is an excellent alternative to traditional tacos.

Taco night, or some variation of it, is a staple meal in a lot of families. There is so much variety to choose from and, at least from my experience, the build-your-own format is a great way to accommodate pickier eaters.

Everyone can add their own favorite toppings and leave the rest. I also love that I can easily make these kinds of meals meatless. I just substitute the taco meat with beans.

Supplies

Ingredients

Start with a few simple ingredients from the grocery store.

  • Lean ground beef
  • Taco seasoning – this homemade taco seasoning is my to-go. A store bought packet would work too.
  • 6” corn tortillas – flour tortillas work well too.
  • Cheddar cheese, shredded – using pre-shredded cheese is an easy time-saver.
  • Fresh pico de gallo – you can also use regular salsa.
  • Sour cream – this homemade cilantro lime crema would be amazing too!
  • Green onion stalk, diced

Instructions

1. Cook beef. This can be done in a large skillet or the air fryer. Add taco seasoning and set aside.

2. Line the air fryer basket with a piece of parchment paper.

3. Layer one tortilla, 1/3 cup cheese, a third of the ground beef mixture, 1/3 cup pico, and 1/3 cup sour cream.

4. Repeat the layers until all of the ingredients are used.

5. Cook at 390 degrees F for 5-7 mins, until the top tortilla starts to turn a golden brown and the cheese is melty.

6. Top with more sour cream and green onion.

7. Use a pizza cutter to cut into wedges and serve.

More Topping Options

  • Substitute the beef for ground turkey or ground chicken.
  • Black beans
  • Pinto beans
  • Refried beans
  • Chopped bell pepper
  • Diced tomatoes
  • Black olives
  • Jalapenos
  • Banana peppers
  • Try a different type of cheese. Pepper jack cheese, Tex Mex, or a Mexican cheese blend would all be delicious.
  • Fresh cilantro

Tips and Tricks

  • The exact cooking time for this recipe will vary depending on the size of your air fryer. Keep a close eye on things to avoid burning.
  • I love how easy clean up is when I use parchment paper, but if you don’t have any, you can also use nonstick cooking spray on the basket.
  • Though best eaten the same day, any leftovers can be stored in an airtight container in the fridge.
