We love to plan simple, easy campfire meals whenever we go camping and this one is perfect. These loaded baked potatoes are a hit with everyone whenever we head into the great outdoors!
How to make a tinfoil packet:
- Cut two pieces of aluminum foil large enough to cover the entire meal (about 12″). Layer them one on top of the other. Optional: spray the interior with non stick spray or line with parchment paper.
- Place recipe ingredients in the center. Bring up the longer edges of the foil and fold together. Grasp one end and roll it up, repeat with the other end.
- Alternatively foil pie plates may be used to cook foil packet meals. Simply place the recipe ingredients into the pie plate and cover with aluminum foil before cooking.
- For best results cook the foil packet on a grill over the open fire.
- Use caution when handling the foil packet as it can become hot while cooking.
How to make foil packet loaded baked potatoes:
- 4 large baker potatoes
- 10-12 Ham slices
- 10-12 Pepperoni slices
- 10 – 12 Cheese slices
- 4 tsp Butter
- 4 Tbsp Sour cream
- 1/4 cup Chives
- Bacon bits (optional)
Directions:
- Slice the potatoes, not quite all the way through about four sections for each potato. Tip: bake and wrap the potatoes in foil at home to save time.
- Fill slices with alternating ham, pepperoni and cheese layers. Wrap in tin foil.
- Cook on the fire or grill for about 20 minutes or until the potato is heated through and cheese is melted.
- Top with butter, sour cream and chives. Bacon bits are a great addition too!
Tips for camping meal preparation:
- Prepare meals in advance at home whenever possible. Leave most of the mess at home where running water is more accessible and clean up is easier. Trust me on this one!
- Create “one pot” family style meals for quick dinners that don’t require a lot of thought.
- Use tinfoil packets, foil pie pans or camp cookers. These tools help to make clean up a breeze!
- Pack ingredients in 1 gallon size freezer bags for flexible storage in small fridges and coolers.

So happy to have found your blog! So many pinterest camping ideas lead to blogs where they say “we don’t camp much… but this seems like a good idea?” so it’s very nice to find a blog where the author actually camps. Anyway, we are vegetarian and I’ve made similar baked potato dinners but we use sweet potatoes and top with a black bean / bell pepper / mushroom topping with taco seasoning and sour cream. SO yum!
