We recently returned from our annual fishing trip on the West Coast and luckily had an abundance of salmon in our catch. One of the first things we did was to put all of the Pinks we caught on the smoker!
Pink salmon is generally considered a lesser quality cut of fish making it perfect for smoking! Not to worry if you don’t just happen to have a smoker at home, Costco has smoked salmon that is not only delicious but also affordable.
Cucumber Smoked Salmon Salad
The addition of smoked salmon to this crispy cucumber salad gives it a depth of flavour that you are sure to love. Not to mention added protein!

Ingredients
Start with a few simple ingredients from the grocery store.
- Whole long english cucumber, sliced – you can use a madoline for uniform slices. I like to cut the cucumber by hand for slightly thicker slices.
- Smoked salmon pieces – we love using this cold smoked salmon recipe. Our Traeger smoked salmon recipe would be good too!
- Pickled red onion pieces – these can easily be made at home by placing a few slices of red onion in apple cider vinegar.
- Herb & garlic cream cheese, softened to room temperature – other flavours of cream cheese may be used as well.
- Fresh dill, chopped
- Capers, fried – frying capers allows the flavour to really stand out.
- Olive oil – extra virgin or avocado works as well.
Instructions
1. Slice the cucumber into even rounds.
2. Drizzle oil onto a frying pan and toss capers. Cook on medium high for 5 minutes until fragrant.
3. Chop the onion and dill.
4. Cut the salmon into bite sized pieces.
5. In a large mixing bowl combine sliced cucumber, onion, dill, salmon and capers.
6. Top with cream cheese and mix until everything is coated evenly.
