Easy Breakfast Casserole Recipe
This breakfast casserole recipe is full of flavourful pork sausage, eggs and cheese. It’s seriously easy to put together, making it perfect for lazy Sunday mornings!
Breakfast is one of our favorite meals, breakfast foods are always a hit with the whole family and usually easy to prepare. This casserole is my go-to for feeding a crowd and the best way to make weekend brunch!

This breakfast casserole with sausage, egg and cheese makes the best one pot style meal. However you could also pair it with a side of bacon, hashbrowns, tomato slices, fresh fruit etc.

Ingredients
- 375 g ground Italian sausage, cooked
- 10 large eggs
- 1/2 cup milk
- 1 1/2 cup diced hash brown potatoes
- 1 cup Tex Mex cheese, shredded
- 1/2 tsp salt and black pepper
- 1 green onion stalk, diced
Instructions
1. Cook the ground sausage in a large skillet on medium until cooked through. Set aside the brown sausage.

2. Preheat the oven to 350 degrees f.
3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.
We like to season this recipe with salt and pepper and often add dill, red pepper flakes, garlic powder or tabasco sauce. Experimenting with different spices is a great way to personalize this breakfast recipe!
4. Spray a large casserole dish with nonstick cooking spray. Layer the hash browns on the bottom of the dish.
Tip: A round baking dish that is at least 10″ in diameter or a 9×13″ casserole dish work best.
5. Layer the cooked sausage over the potatoes.
6. Pour the egg mixture over the ingredients in the casserole dish.
7. Bake for 45 minutes or until the center is firm and cooked through.
8. Top with diced green onions and serve warm.
This sausage breakfast casserole is great for special occasions like Father’s Day, Easter Brunch or Christmas morning. It’s seriously the perfect breakfast casserole for holiday mornings!
How to Store Sausage & Cheese Casserole
It can be wrapped in plastic wrap, stored in the fridge and saved for the next day. Or keep leftovers in an airtight container for the next morning, if they last that long!

Heather, I live at an elevation of 5500 how should I tweak this recipe to make it high altitude? Thanks
You will want to cook it longer at higher altitude, try 5 more minutes or until the center is firm :)
