This beef burrito bowl recipe is easy to make at home and honestly, just as good! It’s perfect for busy weeknights when you have a craving for Mexican food.

Ground Beef Burrito Bowls

Ingredients

This easy dinner comes together in minutes with a few simple ingredients from the grocery store. Find the amounts in the recipe card below.

  • Cooked white rice – long-grain rice or garlic rice may be used. I like to use cauliflower rice for a low carb version.
  • Lean ground beef, cooked with our homemade taco seasoning. It has a combination of seasonings that include chili powder, paprika and onion powder, among others. You can also use a store bought packet of seasoning in a pinch.
  • Romaine lettuce, chopped
  • Large ear of corn (about 1 cup), cooked and cut – we often grill our corn and I just save leftovers!
  • Black beans, drained
  • Cherry tomatoes, halved
  • Fresh pico de gallo or homemade salsa.
  • Cheddar cheese, shredded
  • Guacamole – we also like to add fresh avocado.
  • Sour cream – this homemade cilantro lime crema is also great!
  • Fresh cilantro, finely chopped
  • Jalapeno, sliced

Instructions

1. Prepare and cook rice, set aside.

2. Meanwhile, cook the beef. This can be done on the stove top in a skillet or in the air fryer. Simply cook the beef in a skillet over medium heat. Stir in the taco seasoning and set aside.

3. Dice and shred all of the vegetables.

Ground beef, rice, corn, beans, shredded cheese, halved cherry tomatoes and lettuce in a large white bowl.

4. Divide the lettuce and rice into 4 bowls and top with equal portions of the vegetables.

5. Add the beef mixture.

6. Top with salsa, guacamole and sour cream.

Recipe Notes

The corn can be cooked in the microwave for two minutes or grilled on the bbq. Canned corn also works, just be sure to drain the extra liquid.

You could serve this wrapped in tortillas rather than in bowls if you prefer. Or serve with tortilla chips for a hearty burrito dip.

Leftovers can be stored in an airtight container in the refrigerator for a few days.

How Do You Meal Prep Beef Burrito Bowls?

Simply prepare all of the ingredients at once, allow the ground beef to cool and divide the ingredients into four air tight containers. Store in the fridge until ready to use.

I often store the taco meat separately so that I can heat it up in the microwave before adding it to my dish.
