Having so many orchards and farms in our area is one of my favorite things about where we live. I can find different kinds of local produce almost all year round.

During cherry season, I like to take advantage of all the fresh sweet cherries we have access to. I usually buy an obscene amount, eat way too many of them, then pit and freeze the rest. Frozen fruit is great to have on hand for making smoothies, desserts, and, of course, today’s muffins.

I like being able to make my own muffins at home. The right recipe gives me all the same amazing flavor and texture of a bakery or coffee shop version, but for a fraction of the cost. That’s a major win in my books!

Today’s easy homemade cherry muffins are the real deal. With only a few simple pantry ingredients, you have the perfect treat. They are loaded with juicy cherries and topped with a delicious streusel that will keep the whole family coming back for more.

This cherry muffin recipe also makes a great basic muffin batter. You can easily switch out the cherries for other fresh fruits, like raspberries, strawberries, blueberries, or peaches. Chocolate chips or dark chocolate chunks also make a wonderful addition.

Cherry Muffin Recipe

Ingredients:

Muffin batter:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh cherries, chopped

Topping:

  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 tsp ground cinnamon

Directions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine flour, sugar, salt, and baking powder.

3. Place vegetable oil into a 1-cup measuring cup. Add the egg and enough milk (approximately 1/3 cup) to equal 1 cup total liquid.

4. Mix the wet ingredients with the flour mixture. Fold in fruit.

5. Fill muffin cups right to the top with the cherry batter.

6. To make the streusel topping, mix together sugar, flour, butter, and cinnamon. Sprinkle over top of muffin batter.

7. Bake for 30 to 35 minutes in the preheated oven, or until done.

Tips and Tricks:

  • For a flavor boost, try including a little bit of almond extract or vanilla extract with your liquid mixture. You could also mix some lemon zest or extra cinnamon in with the dry ingredients.
  • To prevent your muffins from sticking to the pan, be sure to grease them well with cooking spray or use paper muffin liners. You may even want to use a combination of both.
  • While it is possible to make muffin recipes with a stand mixer or electric mixer, I recommend doing it by hand for best results.
  • Extra muffins can be stored at room temperature, in an airtight container, for 2-3 days. If you want to freeze them, allow them to cool completely on a wire rack first, to avoid condensation build-up.
  • For easy freezing, wash and pit your cherries, chop them up, and put the fruit into freezer bags.

FAQ:

  • Can I use flax eggs or chia eggs in this recipe? Yes, substitute for an egg-free version.
  • I would like to use whole wheat flour instead of all-purpose. Will this affect the final results? Whole wheat flour should work just as well.
  • Try this recipe with almond milk or your favorite plant-based milk.
  • You could also use frozen cherries for this.
  • Try a combination of white and brown sugar instead of white sugar.
