Herb Crusted Salmon Recipe (Baked in 20 Minutes!)

This easy recipe is perfect for busy weeknights making it one of my favorite salmon recipes to prepare for the fam.  The parmesan herb crust elevates this simple salmon filet to all new heights.

Creating the herb mixture is my favorite way to add depth, flavour and texture to salmon.  The combination of fresh herbs, breadcrumbs and parmesan cheese make this my favorite dish that I have ever made with salmon, seriously.

I was never a huge fan of salmon but this is one of those recipes that makes a convert of anyone.  Fresh salmon has quickly become my favorite fish.  

We have the privilege of stocking the freezer with fresh fish every summer and I’m on a mission to test out new, savory recipes and share them with you.

Herb Crusted Salmon Recipe

I love that you only need a handful of ingredients to make this herb-crusted salmon in minutes.  Be sure to add this easy meal to your menu planning this week!

Ingredients

Start with a few simple ingredients from the grocery store.  The entire list can be found in the recipe card below.

  • Koho salmon fillet, skin on – we love to use fresh caught fish whenever possible however Costco often has good sales.
  • Unsalted butter, melted
  • Lemon juice – fresh squeezed!
  • Salt & pepper
  • Panko breadcrumbs – any kind of breadcrumbs will work.
  • Cloves of garlic, minced
  • Italian seasoning – or a combination of dried oregano, basil and parsley.
  • Fresh dill, chopped
  • Parmesan cheese, grated – fresh, not the bagged kind.
  • Lemon, zested

Instructions

1. Prepare a large baking sheet by lining it with parchment paper. Preheat the oven to 350 degrees F.

2. Prepare the salmon by removing pin bones with tweezers or pliers if needed.

3. Place the fillet on the prepared sheet pan, skin side down.

4. Coat with 2 Tbsp melted butter, lemon juice and salt & pepper.

5. In a medium bowl combine panko, garlic, parmesan, 1/4 cup melted butter, lemon zest and seasonings. Mix well.

6. Cover the top of the salmon fillet with the breadcrumb mixture.

7. Bake in the oven for 20 mins.

8. Cut the salmon into 2″ pieces, leaving the salmon skin on the piece of parchment paper.

9. Serve with a squeeze of fresh lemon juice.

Recipe Notes

Koho is also called “silver salmon” but any species will work beautifully in this recipe.

The best way to get flaky salmon is to not over cook it.  Use a meat thermometer to test the internal temperature of the fish.

You can also test the doneness with a finger.  The salmon should be firm and opaque. Cook time will vary depending on the thickness of your salmon filet.

One teaspoon of garlic powder may be substituted for the fresh garlic.

Olive oil may be used in the place of melted butter if you prefer.

Fresh parsley may be used in the place of dill or in addition to it.

Place salmon in an airtight container or covered in plastic wrap in the fridge to store any leftovers.

Ingredients

  • 2 pound koho salmon fillet skin on
  • 2 Tbsp unsalted butter melted
  • 1 tsp lemon juice
  • 1/4 tsp each salt & pepper
  • 1 cup Panko breadcrumbs
  • 2 cloves garlic minced
  • 1 Tbsp Italian seasoning
  • 1 Tbsp fresh dill chopped
  • 3 Tbsp parmesan cheese grated
  • 1/4 cup unsalted butter melted
  • 1/2 lemon zested
