This pulled pork burrito bowl recipe is a family favorite!  It’s a great way to use up leftover shredded pork and easy to customize with your favorite toppings.

I like to add easy recipes like this to my weekly meal prep.  These bowls are perfect for feeding a crowd or dividing into separate airtight containers for on the go lunches.

Pulled Pork Recipes

We love this pulled pork slow cooker recipe.  It’s easy to set and forget the pork in a crock pot set to low heat for the day.

This smoked pulled pork recipe is another favorite.  A pork roast is placed on the grill grate of a smoker and slow cooked for hours.

We then place pork in a large bowl and toss it with our favorite BBQ sauce to use in pulled pork sandwiches or sliders.

Leftover Pulled Pork Bowls

Ingredients

This easy recipe comes together in minutes with a few simple ingredients from the grocery store.  The full ingredient list can be found in the recipe card below.

  • White rice – I routinely use cauliflower rice for a low carb version.
  • Leftover pulled pork – I store leftovers in the fridge or freezer for just such an occasion!
  • Large ear of corn (about 1 cup), cooked & cut
  • Black beans, drained
  • Carrots (about 1 cup), shredded
  • Red cabbage, shredded
  • Red onion, sliced thinly – tangy pickled red onions are also a fav.
  • Barbecue sauce – we love this apple bourbon BBQ sauce but a store bought sauce like Sweet Baby Rays is also good!
  • Fresh cilantro, finely chopped
  • Lime wedges, garnish

Instructions

1. Prepare rice, set aside.

2. In a medium bowl combine leftover pulled pork and BBQ sauce.

3. Dice and shred all of the vegetables.

4. Divide rice into 4 bowls and top with equal portions of the vegetables.

5. Reheat the pulled pork and add to the bowls.

6. Top with more bbq sauce, cilantro and a squeeze of lime.

Recipe Notes

The corn can be cooked in the microwave for two minutes or grilled on the bbq. Canned corn also works, just be sure to drain the extra liquid.

You could serve these deconstructed burritos wrapped in tortillas rather than in bowls if you prefer.  

Leftovers can be stored in an airtight container in the refrigerator for a few days.

How to Meal Prep Burrito Bowls?

Simply prepare all of the ingredients at once, allow the ground beef to cool and divide the ingredients into four .  Store in the fridge until ready to use.

I often store the pulled pork separately so that I can heat it up in the microwave before adding it to my dish.

  • 4 cups white rice
  • 2 cups leftover pulled pork
  • 1 large ear of corn about 1 cup, cooked & cut
  • 1 cup black beans drained
  • 2 carrots about 1 cup, shredded
  • 1 cup red cabbage shredded
  • 1/2 red onion sliced thinly
  • 1 cup barbecue sauce
  • Fresh cilantro finely chopped
