How to Make Mint Chocolate Chip Ice Cream
Mint chocolate chip Ninja Creami ice cream is a creamy, high-protein frozen treat with a refreshing minty twist and rich chocolate chips in every bite!
Ingredients You’ll Need
- Vanilla Premier Protein shake โ Creates a creamy, protein-rich base for this ice cream. You can substitute with milk if you want.
- Monk fruit sweetener or granulated white sugar โ Adds sweetness and balances the cool mint flavor without overpowering the recipe. Use your sweetener of choice!
- Sugar-free vanilla pudding mix โ Helps create a rich, creamy texture while reducing ice crystals during freezing.
- Mint extract โ The key to that refreshing, cool mint flavor.
- Green food coloring โ Gives the ice cream its iconic minty-green appearance and can be omitted if preferred.
- Sugar-free chocolate chips โ They add bursts of rich chocolate flavor. I use Lily’s chocolate chips, but you can use your favorite brand.

Instructions
1. Combine the vanilla Premier Protein, pudding mix, sweetener, mint extract, and food coloring in the Ninja Creami pint container. Stir well.
2. Freeze the pint container on a flat surface for 24 hours or until frozen solid.

3. Remove the pint from the freezer and run under hot water for 30 seconds to help loosen the sides. Take off the lid and place the container into the outer bowl of the Ninja Creami.
4. Secure the outer bowl lid, then insert the outer bowl into the Ninja Creami machine. Press the Lite Ice Cream button and let the cycle complete.
5. Remove the lid and check the texture. If the ice cream is powdery, reinsert into the machine, and press the Re-spin button.

6. Create a small hole in the center of the ice cream and add the chocolate chips. Use the Mix-In button to evenly distribute them throughout.

7. Scoop into a bowl, top with extra chocolate chips if desired, and enjoy!

Tips and Tricks
- Want ultra-creamy ice cream? Add ยฝ teaspoon xanthan gum before freezing to maintain texture. This can be substituted for the pudding mix.
- Chop mix-ins into small pieces so they distribute evenly and blend smoothly.
- Place the pint on a flat surface in your freezer to prevent freezing at an angle.
- If the ice cream is too hard, use the Re-spin function for a softer consistency.
- Let the frozen pint sit at room temperature for 10-15 minutes or run under hot water for 30 seconds before spinning to prevent icy chunks.
- If a dome forms on top while freezing, try freezing without the lid or scrape off any excess before spinning to protect your blades.
- If you’re looking to reduce sugar content, consider using natural sweeteners like honey or maple syrup for a different flavor profile.

Frequently Asked Questions
Can I use fresh mint instead of mint extract?
Mint extract is recommended because it provides a concentrated flavor without adding extra moisture. Fresh mint can be infused into the liquid base, but the mint flavor will be much milder.
Can I make this recipe keto-friendly?
Yes! Use a sugar-free protein shake, monk fruit sweetener, sugar-free pudding mix, and sugar-free chocolate chips to keep the carb count low while maintaining great flavor and texture.
What’s the best chocolate to use for mint chocolate chip ice cream?
Mini chocolate chips or finely chopped chocolate work best because they distribute evenly throughout the ice cream and are easier for the Ninja Creami Mix-In cycle to process.
Can I add different mix-ins?
Of course! Add crushed cookies, nuts, or even a swirl of chocolate syrup to make it your own!
Why does my Ninja Creami recipe need to freeze for 24 hours?
The Ninja Creami works best when the base is frozen completely solid. Freezing for a full 24 hours helps create the smoothest texture and ensures proper processing.
Why is my Ninja Creami mint chocolate chip ice cream crumbly?
A crumbly or powdery texture is completely normal, especially in lower-fat, high-protein recipes. Simply use the Re-Spin function once or twice until the ice cream becomes smooth and creamy.
How should I store leftovers?
Flatten the top before refreezing in the pint or an airtight container. If it hardens too much, reprocess it using the same mode you originally used.
