Cranberry Salsa Recipe
Ingredients
- Whole cranberries, fresh or frozen – These tart little berries are bursting with flavor and bring a vibrant splash of color to your dishes.
- Cilantro, chopped – This herb brings a fresh, zesty kick that brightens up everything from salsas to salads.
- Green onion stalks, diced – With their mild onion taste and crisp bite, they’re perfect for adding freshness and crunch.
- Jalapeno pepper, seeds removed and diced – This pepper gives a nice kick without being overpowering, adding just the right amount of heat.
- Limes, juiced – Their tangy juice adds a refreshing burst of acidity that elevates both sweet and savory dishes.
- Swerve granulated sweetener (or white sugar) – A great way to add sweetness without the extra calories.
- Fresh ginger, minced – This aromatic root brings a warm, spicy note that adds depth and complexity to your salsa.
- Salt – The essential seasoning that enhances all the other flavors and brings everything together.
This recipe makes about two and a half cups of fresh salsa, depending on the size of your vegetables and cranberries. I like to use Swerve sweetener to make this a low carb cranberry salsa, but white sugar can be used when not counting carbs.
Instructions
1. Purchase ingredients at the grocery store, then wash and prepare them.
2. Dice the jalapeno and green onions. Chop the cilantro.
3. Combine all of the ingredients in a food processor.
4. Pulse cranberries in the food processor until the salsa is finely diced. Alternatively, for a chunkier salsa, the cranberries can be chopped finely and combined with the other ingredients, rather than using a food processor.
Cilantro and lime can be added to your liking, but we always think the more cilantro, the better. Fresh cilantro and lime juice is a must-have in order to get the crisp, fresh flavor that makes this the most amazing salsa!
