Ingredients

  • Whole cranberries, fresh or frozen – These tart little berries are bursting with flavor and bring a vibrant splash of color to your dishes.
  • Cilantro, chopped – This herb brings a fresh, zesty kick that brightens up everything from salsas to salads.
  • Green onion stalks, diced – With their mild onion taste and crisp bite, they’re perfect for adding freshness and crunch.
  • Jalapeno pepper, seeds removed and diced – This pepper gives a nice kick without being overpowering, adding just the right amount of heat.
  • Limes, juiced – Their tangy juice adds a refreshing burst of acidity that elevates both sweet and savory dishes.
  • Swerve granulated sweetener (or white sugar) – A great way to add sweetness without the extra calories.
  • Fresh ginger, minced – This aromatic root brings a warm, spicy note that adds depth and complexity to your salsa.
  • Salt – The essential seasoning that enhances all the other flavors and brings everything together.

This recipe makes about two and a half cups of fresh salsa, depending on the size of your vegetables and cranberries. I like to use Swerve sweetener to make this a low carb cranberry salsa, but white sugar can be used when not counting carbs.
