Ingredients that you will need:
- 1 pound ground beef
- Medium onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups mini lasagna noodles or 8 broken lasagna noodles
- 250 g jar of marinara pasta sauce
- 1 Tbsp Italian seasoning
- 14oz can diced tomatoes
- 6 cups beef broth
- 1 cup shredded mozzarella cheese
- 1 cup chopped fresh spinach
- Cook ground beef and drain.
2. Add beef and remaining ingredients except for the cheese and spinach to a crockpot.
3. Cook in the crockpot for 4 to 6 hours on low. Ten minutes before serving add spinach and cheese.
4. Top with fresh parmesan cheese if desired. Serve with focaccia mug bread.
Tips & tricks:
- Frozen spinach may be used instead of fresh spinach and added 30 minutes before serving.
- If you find that the noodles get too mushy, add them at the end, 30 minutes before serving. Be sure that they are completely covered in broth and turn the cooker up to high for the last 30 minutes.
- Mozzarella cheese works best because of how easily it melts but you can use any kind of shredded cheese.

Tips for making Crockpot Freezer Meals:
- Use 1 gallon, large freezer bags. Label bags with the date, recipe and cooking instructions.
- Lay ingredients flat in the bag for easier storage in the freezer.

- Defrost meals in the refrigerator or place frozen into the crockpot. If the meal is defrosted, reduce the cooking time accordingly (subtract two hours for most crockpot meals).

- Store meals for up to three months in the freezer.
