I think that, over the years, cottage cheese has gotten a bad wrap. These days, though, this unassuming dairy product is showing up all over social media feeds.

From pancakes to smoothies, in snacks, meals, and even dessert, cottage cheese is everywhere.

So why exactly is cottage cheese being praised in all corners of the internet? Well, it is actually an excellent addition to a healthy, balanced diet.

With around 12 grams of protein per 1/2 cup, it is high in protein, a source of calcium, and cottage cheese is also a good low-fat and low-calorie option, even if you choose a full-fat variety.

Cottage Cheese Protein Balls

Today I want to share a protein ball recipe with you that contains cottage cheese. This high protein recipe is perfect for satisfying my sweet tooth and my hunger.

Also, blending the cottage cheese mixture gives it a perfectly smooth texture that I love. Be sure to check out these date bars and gluten free cracker toffee.

I think the vanilla protein powder helps these edible cookie dough bites retain the flavor of traditional chocolate chip cookies, but I definitely want to try a chocolate or peanut butter version too. What flavor would you try?

Ingredients

  • Cottage cheese – I like to use 2%.
  • Maple syrup – I used Lakanto sugar-free syrup.
  • Pure vanilla extract
  • Almond flour – all-purpose flour may be used, but it must be heat treated to make it safe to eat raw.
  • Protein powder – I used vanilla, but you can use whatever flavor you’d like.
  • Chocolate chips, divided – I used Lily’s sugar-free dark chocolate chips.
  • Coconut oil

Instructions

1. In a blender or food processor, blend the cottage cheese until it is smooth.

2. Setting aside 1 cup of chocolate chips, stir all of the rest of the ingredients together in a medium bowl until well combined.

3. Refrigerate for 30 minutes.

4. Line a baking sheet with parchment paper.

5. Use a cookie scoop to create even portions and roll them into balls.

6. Place the cookie dough balls onto the baking sheet and put them into the freezer.

7. Freeze for at least 20 minutes.

8. Place the remaining chocolate chips into a small, microwave safe bowl and heat at 15 second intervals, stirring after each interval, until completely melted.

9. Dip the cookie dough balls into the melted chocolate, coating each one in chocolate, before placing it back onto a sheet of parchment paper.

10. Refrigerate until the chocolate hardens.

Tips and Tricks

  • Use more or less sweetener according to taste.
  • For a nut-free version, substitute the almond flour with heat treated all-purpose flour, oat flour, or coconut flour.
  • Add any of your favorite cookie dough mix-ins. Try milk or white chocolate chips, caramel bits, chopped up candy bars, nuts, sprinkles, or mini M&Ms.
  • Store extra protein balls in the fridge in an airtight container.
