Our Camp Cooking Essentials

  • A pie iron camp cooker makes cooking over the open fire super easy. Check out these 20+ Pie Iron Recipe Ideas for tons of camp cooker inspiration! Or visit my how to use a pie iron post for tips.
  • Foil pie plates make tinfoil packet meals even easier with the sturdy base that they provide.
  • These grilling bags that I recently found are amazing! Simply add all of your ingredients to the bag at home, then throw it on the campfire or grill when camping in the great outdoors. Avoid the grill bags with plastic windows, though, as they melt.
  • We love these BBQ cooking gloves because they make handling campfire food a whole lot safer!

Ingredients

  • Groundย turkeyย orย beefย โ€“ Go with lean ground beef or ground turkey, whatever your crew prefers. Just make sure itโ€™s fully cooked before you pack it so you can skip that step at the campsite.
  • Homemade salsaย โ€“ Adds flavor and keeps things juicy. If you don’t make your own, use your favorite store-bought salsa.
  • Taco seasoningย โ€“ Use your favorite seasoning mix or whip up some homemade taco seasoning.
  • Tex Mex shredded cheeseย โ€“ Because cheese makes everything betterโ€”use cheddar cheese if you don’t want the extra kick.
  • Yellow onion, diced โ€“ Adds a nice bite; sub in white onion or green onions if thatโ€™s more your vibe.
  • Lettuce, shredded โ€“ Go with crisp romaine lettuce for crunch and freshness.
  • Bell pepper, diced โ€“ Adds color, crunch, and a bit of sweetness.
  • Sour creamย โ€“ Optional, but adds that creamy tang we all love.

Instructions

1. Fully cook the ground meat, add taco seasoning, and place on a sheet of heavy duty foil or in a foil pie plate. Top it with diced onion, salsa, and a generous sprinkle of Tex Mex shredded cheese.

Tip: Cook your ground meat with taco seasoning at home, then transfer it to an airtight container or Ziploc bag so it is ready for you to pack.

We eat this straight out of the pie plate! No need for individual servings. You can also pack along tortillas or taco shells and use this tinfoil packet taco salad recipe as a filling. I love how easy and versatile this camping meal is!

How to Make a Tinfoil Packet

  • Cut two pieces of aluminum foil large enough to cover the entire meal (about 12″). Layer them one on top of the other. Optional: spray the interior with nonstick spray or line with parchment paper.
  • Place recipe ingredients in the center. Bring up the longer edges of the foil and fold together. Grasp one end and roll it up, repeating with the other end.
  • Alternatively, foil pie plates may be used to cook foil packet meals. Simply place the recipe ingredients into the pie plate and cover with aluminum foil before cooking.
  • For best results, cook the foil packet on a grill over the open fire.
  • Use caution when handling the foil packet, as it can become hot while cooking.

Tips and Tricks

  • Store your toppings in plastic wrap or 1-gallon freezer bags for compact cooler storage.
  • Cook the taco meat at home before your trip to save time and avoid dealing with raw meat in the woods.
  • Double layer your foil packets to avoid rips.
  • Want to skip cleanup entirely? Serve in disposable foil pie pans for individual servings.
  • Toss in extras like black beans, pinto beans, or black olives to bulk it up.
  • Add tortilla chips or tortilla strips on top for crunch.
