This camping breakfast skillet recipe is super easy to make and deliciously low carb. Perfect for adding to your meal planning this summer!

Breakfast is the most important meal of the day and one that we don’t like to skip while camping. This delicious campfire meal can be made over the fire or on the camp stove in a cast-iron skillet.

This delicious breakfast is the perfect way to use up ingredients in the fridge. We often add hash browns , green onions, bacon, maple syrup, cheddar cheese, cooked sausage, sweet potato, hot sauce and cherry tomatoes if we have them.

Ingredients:

  • Bell pepper, diced
  • White onion, diced
  • Ham, diced
  • Egg
  • Cheese, shredded
  • Olive oil
  • Salt & pepper

Tip: prepare as many of ingredients at home whenever possible to make cooking while camping easier. I like to dice the onion, green pepper and ham beforehand and store it in a freezer bag for camping.

How to make this breakfast skillet recipe:

  1. Prepare ingredients.

2. Add oil, veggies and ham to a skillet.

3. Cook over the fire or grill on medium heat for 5-10 minutes or until onion is opaque.

4. Add an egg and cook for an additional 5 minutes or until the fried egg reaches your desired doneness.

5. Top with shredded cheese and season with salt & pepper.

Tips for cooking with a cast iron skillet:

  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking as the surface of the iron will be hot.
  • Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse and dry thoroughly before storing.

Ingredients
 

  • 1/2 Bell pepper diced
  • 1/4 White onion diced
  • 1/4 cup Ham diced

  • Salt & pepper
