I mean, how amazing do these look?! They taste just as good, I promise. This is a great guilt free muffin perfect for breakfast, lunch or dessert! You could also try substituting almond flour for the oats in this recipe or stevia for the honey. Just be sure to create a thick, cake like batter and watch the baking time.
Flour Alternatives:
- Almond flour is my personal favorite for consistency and flavour. I like to purchase the Kirkland brand almond flour from Costco.
- Coconut flour can sometimes be crumbly in my experience but good in combination with almond flour. I like the Red Mill brand.
- Rice flour is my least favorite in terms of consistency but a great alternative for those who may have allergies.
Sugar Alternatives:
- Stevia is made from the Stevia leaf, I like to use both the granulated and powdered version of this in my recipes.
- Monk Fruit extract is made from Monk fruit, this is another great alternative that is low on the glycemic index.
- Erythritol is a sugar alcohol and another popular low carb sweetener that can be used in baking.

Have you actually tested the oatmeal and banana recipe? I had to cook mine 30 min. not 10.
Yes, it’s one of our favorites! Sometimes it takes 12-15 minutes depending on the size of bananas and how ripe they are.
Thanks for the recipe, Heather. However it took longer that you said. I had to check every 5 minutes to toothpick them after 10minutes. :/
Good to know! thanks for the feedback <3
Are you using cooked steel cut oats? Thanks! They look great!
Raw oats :)
These look super moist and yummy! I always use Monkfruit so I’ll sub that for the honey. I think I’ll try the PB2 in place of peanut butter or almond butter. And finally, Lily’s chocolate chips lol . . . I do WW so have to make some modifications but this looks super good!
Those modifications sound delicious! Let me know how they turn out <3
