This easy blackened chicken recipe gets its name for the way the blend of spices creates a dark crust on the meat during the cooking process. This great recipe is just the kind of 30-minute meal that is perfect for an easy weeknight dinner.
Using thin chicken breasts means that they cook really quickly and the flavor from all the spices is incredible.
Blackened Skillet Chicken
I include a side of veggies, like green beans or a salad, for a complete meal that is guaranteed to satisfy even the hungriest boys.
I can also add leftover blackened chicken to a variety of dishes, such as tacos, sandwiches, or even pasta salad, which makes it perfect for meal prep.
You really can’t go wrong with this blackened chicken skillet. You have to try it!
Variations
- Cut the chicken into bite-sized pieces before cooking.
- Use the blackening seasoning on chicken wings or fish.
- Up the heat level of your spice blend by using cayenne pepper in place of some or all of the chili powder.
- In a pinch, use Cajun seasoning from the store in place of the blackened seasoning spices.

Ingredients
- Boneless skinless chicken breasts
- Extra virgin olive oil
- Paprika
- Cumin
- Black pepper
- Chili pepper
- Lime juice
- Cilantro, chopped
- Lime wedges, garnish
Instructions
1. Pat the chicken breasts dry with paper towels.
2. Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and use a meat mallet to pound to an even thickness.
3. In a small bowl, combine 1 Tbsp of the oil and spices.
4. Coat both sides of the chicken breasts with the spice mixture.
5. Add the remaining oil to a large skillet.
6. Heat over medium-high heat until the oil starts to sizzle.
7. Place chicken cutlets in the hot skillet and cook until browned, about 5 minutes.
8. Flip and cook for an additional 3-5 minutes.
9. Top with fresh lime juice and cilantro.
Serve with garlic rice, a kale caesar salad, loaded potato salad or red potato parmesan.
Tips and Tricks
- Try this easy recipe with boneless skinless chicken thighs or chicken tenders instead of chicken breasts.
- Eating raw chicken is a health hazard. To be sure your chicken is fully cooked, check the internal temperature using a meat thermometer inserted into the thickest part of the meat.
- Store any leftover chicken in the fridge in an airtight container.
