Tomato Spiderweb Halloween Soup Recipe

While I love me some holiday themed food, this quick and easy tomato soup definitely isn’t just for Halloween. Enjoy it any time of year with a side of warm crusty bread and you have yourself a little bit of heaven.

Supplies
Begin by stocking the kitchen with a few of my favorite supplies!
- Large dutch oven or pot – I love this white enamel, cast iron dutch oven.
- Wooden spoon – perfect for stirring the soup.
- Measuring cups & spoons – for measuring out our ingredients.
- Henckle knife – good for chopping tomatoes.
- Immersion blender
- Freezer or pastry bag
- Toothpick or skewer
Ingredients
- Roma tomatoes, diced
- Olive oil
- Yellow onion, chopped
- Garlic cloves, minced
- Vegetable broth
- Fresh basil leaves, chopped
- Heavy cream
- Sour cream, for garnish
Instructions
- In a large pot, over medium heat, cook onion and garlic in olive oil.
2. Add tomatoes and broth, bring to a simmer, reduce heat to low, add basil, and cook for 30 minutes.
3. Add heavy cream and use an immersion blender to blend until smooth.
4. Place sour cream in a freezer bag and snip off the corner.
5. Pour soup into bowls.
6. Draw rings of sour cream on top of the soup, then use a skewer or toothpick to pull lines through the sour cream, creating a spider web effect.
Serve with these fun Halloween ghost breadsticks or Halloween mummy garlic bread!
Variations
- Use chicken broth in place of vegetable stock.
- Instead of heavy cream, try full-fat coconut milk.
- Add some spice with cayenne pepper or red pepper flakes.
- For an even more filling soup, you can add all kinds of extras to the basic soup base. Try bowtie pasta or other small shapes, diced red potatoes, green beans, or kidney beans.
- Sliced green onions make a nice garnish.
- Switch out the tomatoes and turn it into sweet potato or pumpkin soup instead.
Tips and Tricks
- You can make this soup easily in a slow cooker.
- This recipe is a great one for make-ahead meal prep. Cook up a large batch of soup and store it in the freezer, in an airtight container, for up to 3 months. When you want to eat it, just heat and serve.
- A spider’s web is perfect for Halloween, but you can draw any kind of shape or design that you want with the sour cream. Customize it to fit with any season or occasion.
