The Best Banana Pancake Recipe

The addition of bananas to our regular pancakes has been a big hit and a winner with the teens in the house. Banana bread, banana bars and these Banana Chocolate Chip Muffins have been a staple in the boys’ lunch boxes for years.

Supplies
- Skillet, griddle or non-stick pan – I really like this white granite non stick pan set, it’s pretty and functional!
- Large sized mixing bowl – this pyrex set is my go-to.
- Measuring cups and spoons – these ones are awesome!
- Rubber spatula – for flipping the pancakes.
- Whisk or spoon – for mixing the batter.
- Paper towel – making clean up a breeze!
How to ripen bananas quickly
This recipe calls for overripe bananas, the riper the better. To ripen your bananas quickly, place them into a paper bag overnight. The bag traps ethylene, the element that makes for ripening bananas.
You can also try heating the bananas in the microwave or oven to cook and soften them more quickly.
These healthy banana pancakes are perfectly moist, soft and flavourful. This is an easy banana pancake recipe to make for lazy Sunday mornings or quick weekend brunches.
How to make the best banana pancakes
Ingredients
- 1 cup all purpose flour
- 1 Tbsp white sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 2 Tbsp butter, melted
- 2 ripe bananas, mashed
- 1/2 tsp vanilla extract
- 1/4 cup semi sweet chocolate chips (optional)
- 1/4 cup walnuts, chopped (optional)
- Butter
- Maple syrup
Tip: store over ripe bananas in an airtight container in the freezer for later use in recipes like this one.
Directions
1. Sift together dry ingredients; flour, sugar, baking powder and salt in a medium bowl.
2. In a separate bowl with a whisk or hand mixer, mix together egg, milk, melted butter, vanilla and mashed banana.
3. Add the wet ingredients to the flour mixture and combine until a lumpy batter is formed.
Note: at this point you can fold in the chocolate chips if you desire.
4. Preheat a large skillet, frying pan or griddle over medium heat.
5. Using a measuring cup or scoop pour about 1/4 cup of the pancake batter for each pancake onto the hot skillet.
6. Cook until the pancake is golden brown on each side, approximately 3 minutes.
Tip: look for the creation of bubbles around the edges of the pancake to know that the first side is done and then flip pancakes to cook the second side.
Note: place cooked pancakes on an oven safe plate or baking sheet in the oven on the lowest setting to stay warm while cooking the rest of the homemade pancakes. I like to cover the fluffy pancakes with paper towel between batches, this is a great way to keep them from becoming too moist.
7. Serve warm with butter, syrup and walnut pieces.
These are beautifully served with fresh banana slices but you could also add; whipped cream, peanut butter, brown sugar, fresh fruit, lemon zest or a simple drizzle of maple syrup.
This recipe makes about 8 perfectly moist banana pancakes . You can easily create a double batch for larger groups or a hungry crowd of teenagers.

These actually make a really great make ahead breakfast for busy mornings! Simply store leftover pancakes in a large freezer bag or airtight container for a week in the fridge or in the freezer for up to three months. You can also cover a plate in wax paper at room temperature while waiting to serve.
